Need absinthe /food pairings....

Hey everybody I'm having an absinthe party and wondering what the heck to pair it with foodwise (mostly appetizers- not necessarily a meal) I'm trying to stick with kind of a turn of the century Parisian artworld theme. Any suggestions would be helpful! Thanks!

I also wanted to mention we will most likely be having the absinthe in the traditional way- with the absinthe spoon and the sugar cube. I will have a few recipes on hand (for absinthe cocktails like the monkey gland & corpse reviver) in case folks do not like the anise forward flavor of the traditional method.

i don't know about turn-of-the-century, but i would play off the anise-y flavors with fennel and/or other herbs. oysters with a mignonette might be nice, cold poached mussels with herbs, fennel and orange salad (or on a crostini), smoked salmon and fennel, roasted beets or carrots with anise or fennel seed, deviled eggs with tarragon & dijon. sweets? i love a bittersweet chcolate with candied fennel, shortbread cookies with anise seed.

I would definitely go with seafood and/or anise-y foods as well. Other than dmarina's lovely ideas, how about seared scallops, shrimp cocktail with fennel "slaw", fennel "crisps" (thinly sliced and roasted fennel), and maybe, green salad with tarragon dressing? Whatever you end up serving, have fun!
