Leftover Asparagus-What to make?
My aunt gave me all the left over cooked asparagus from passover dinner. I have a box of chicken stock in the cabinet so I am thinking of making a soup of sorts. I also have some cannelini beans I can throw in. Any suggestions?

Cream of asparagus soup, puree the living crap out of it so it doesn't matter how overcooked it is. You can add the beans, pureed as well, to give the soup a little body and cut down on the amount of cream.

I'd be headed right for the Asparagus Cheese Soup, at least replacing the boullion with chicken stock and using a mild cheddar instead of the American cheese. Further modifications would probably be nice, too, such as combining different cheeses, etc.

i thought of a cream/cheese soup but i would prefer to stay away from dairy as much as possible. if i puree the beans that might help with the creaminess. hmm....

I just made an asparagus soup with white beans. Since your asparagus is already cooked, I'd puree it in a blender or food processor and stir that in at the end. It would have more body than a broth, but wouldn't be as rich as a cream-based soup.

oh - and those mini-meatballs can easily be made with ground chicken, turkey, beef or lamb instead of pork.

I made an asparagus tart once but I cannot remember where I got the recipe. Made a custard of asparagus and baked it in a tart shell. Served warm or room temperature.
You could minimize the dairy by using chic or veggie stock but there's no eliminating the eggs.

I just made a "creamy" asparagus soup last night with asparagus & potatoes. Yummy. Sautee onions, shallots, garlic, add asparagus, add chicken broth, potatoes, dash of salt & pepper. Boiled everything until it's soft. Puree in blender.
