Jackfruit
Does anyone know what (if anything) to do with jackfruit? I bought it in an Indian market, canned in brine, without having a clue as to what it is. I haven't opened the can yet, so have no idea what it tastes like.

If it's in brine, that probably means it is sweetened. chop some up and toss in a fruit salad (strawberries, lychee, longan, pineapple, bananas) and use some of its juice to mix up the salad. Add toasted coconut to top for a yummy crunch.
Fresh jackfruit is the best though, serve chilled over ice. Or chopped over fresh vanilla ice cream.

chopped and served with longan or lychee and tapioca in coconut milk over ice. one of my favorite desserts.
