In SERIOUS need of recipes!

Hey all! I really need your help. I have a 6 ' tall, stand alone freezer FULL of ground venison and my family is getting tired of my meatloaf, tacos and chili. Can you please share with me any recipes/suggestions you all have that use either ground beef or ground venison.

I also tried out this venision enchilada recipe before, but cheated with canned enchilada sauce (it says cubed venison but you can easily swithc for ground):

Good luck. I had a hell of a time just getting though the back end of a deer (I deboned and cubed it, but didn't get it ground. We ate many stews.).

I'm going out on a limb here and saying that Hamburger-Helper-like dishes are fanastic with venison - or even cut half and half with ground beef. Now I have been known to eat the evil boxed stuff which I know many of our fellow readers do not. But boil up some short pasta, toss in a can of tomatoes and a pound of venison with spices, onion, garlic (and lots of worchestershire) and well, my kids eat it up!

What about meat pie (tortiere) - venison, pork, beef? Meatballs? Kebee - my spelling is wrong but the Lebanese skewers with ground meat?

Oh and I forgot to say - send me some! My man didn't get a deer last year!

My mom often used ground venison in spaghetti. It was delicious. You could also use it in moussaka.

Make your own venison sausage.

My first thought was about meatballs and moussaka, too. You can also make spinach and venison croquettes (never made them with venison, but they are great with either beef or chicken - if venison is on the drier side, spinach will add plenty of moisture), wontons or pot stickers, savoury pies and/or quiches, lasagna, stuffed peppers and/or cabbage...

Remember, venison is very lean compared to beef. One trick that works, especially if making meat loaf, meatballs or burgers from venison, is to add some tomato juice to it - it will help keep it moist in lieu of fat.

Wow. I envy you. Someone in your family is a hunter I get. I wonder if it would be too gamey for Kefta? Mix it with chopped onions, some softened butter, and whatever spices you like, and let it chill for a little while in the fridge. Then, take handfuls of it, and form it around kebab skewers, as big around as your big toe. Either grill, or cook on a grill pan, turning often. I make this with ground lamb, and it turns out quite well.

I used to live in Spartanburg, SC and there weren't many places for a foodie to indulge. One place that was fantastic was Gerhardt's. They served a Jaeger Schnitzel that phenomenal. Check out Wolfgang Puck's recipe at:

Homemade Spaetzel would definitely be a plus, but buttered egg noodles and quick pickled red cabbage would be just fine.

That would make a seriously divine ragu for homemade pasta! Just be sure to add a lot of good red wine and cook it for a very long time.

Venison needs some fat!

For sausage, grind it 50/50 with pork. For meatballs, burgers, etc cut it about 75/25.

Ma Po Tofu using venison instead of pork? Put it in Ravioli? How about Mantoo dumplings? Venison stroganoff?

I was wondering if it was ground with any extra fat or pork. My friend who supplies me with venison grinds some with pork and some with bacon. It is delicious and I use it in all the recipes I'd use ground chuck or ground sirloin. Free meat that tastes spectacular. What could be better?

How about some lettuce wraps? Cook the meat with soy sauce, garlic, green onion, chili sauce, etc. Serve in lettuce cups with shredded carrot, ground peanuts, etc.
