Has anyone ever used egg beaters to make carbonara?

I'm talkin' "real" carbonara, where the only ingredients are pancetta, eggs and parmesan cheese. (and a little pepper and pasta water). Just want to know if it's worth it to try to substitute for real raw eggs?

I guess it would be alright if you used the EggBeaters with yolk. Btw, "real carbonara" uses guanciale, but pancetta is easier to find.

No one loves Eggbeaters more than I do (especially the new one with yolks added) but I really think, as long as you're using pancetta, parm and all that carb laden delicious pasta, that you'd be missing the essence of what whole eggs would contribute for very little savings on calories and fat.

If you do decide to go with the EB, use the yolks included type.

@gram, I figured not a lot of people would know what guanciale was, so I just went with pancetta, I just wanted to differentiate from the people who use cream and other ingredients that change the structure. I do have the EggBeaters with the yolk which is why I was interested in opinions, see if anyone had attempted this substitution.

@bess it's a cholesterol issue for my husband, I thought I could slip the egg substitute past him without him noticing and hope that it didn't change the taste much... can't really fake him out with the meat or cheese though.

The flipside of what bessfour said is that, with all that pacetta and cheese, it's already very rich, and the lower quantity of yolk may not be noticeable at all.

Then again, if cholesterol is the concern, carbonara is an interesting choice.

Well it's not something I make often, haven't had it in many months, was just trying to make changes where possible... some change is better than no change. Plus, I have the EggBeaters and I was just trying to find things to use it with, other than breakfast. :)

@Southern_bella - If you want to go with the "real thing", the guanciale sold here is excellent.

Didn't mean to sound like I was passing judgment, and sorry if I did. What I was mainly trying to say was, Egg Beaters should be fine. I'd try it.

I can barely choke 'em down as scrambled eggs. (Sigh.)
