Great Spring/Summer Recipes
I might be jumping the gun here a bit, but the sun is out in Seattle for the second time all year. So what are some of the best spring/summer recipes?
I'm thinking bold flavors, simple, and of course delicious.

The ultimate in my life would be a Seafood (Clams, Crab, Shrimp & Lobster) Bake with fresh silverqueen or bi corn on the cob, warm beefsteak tomatoes, and all the salads and fixins, including Syracuse salt potatoes dipped in butter. Nothin' better under the sun, shared with all your beloved family and friends. On the beach would be even better.

Mmm...grilled pizza.
My family loves one type where we substitute BBQ sauce for the pizza sauce, then top with grilled chicken (shredded), caramelized onion slices, yellow peppers and Jack cheese. Add a nice cold Guinness and winter becomes a dim memory.

We love shrimp and sausage skewers: brined shrimp, poached and sliced turkey sausage (when you put it on a skewer, the sausage slice goes right into the shrimp "curve"), chunks of bell peppers, pineapples and red onion in between, basted with plum sauce and grilled -- mmm!

We make summer rolls.
My family's version is a spin on the Vietnamese rolls wrapped in the soft rice paper. You just soak the wrapper in warm water for a few seconds (the hotter the water, the shorter the time), take them out and they become pliable.
We lay out a tray of traditional and non-traditional fillings: shredded green papaya, matchstick cukes, matchstick carrots, sliced red peppers, sliced jalapenos!(a must), slices of grilled chicken, halved grilled shrimp, rice noodles, romaine or leaf lettuce, and whatever other veggies that can be shredded or rolled.
Everyone rolls their own. Dip in fish sauce or peanut sauce, add a dab of sri racha, extra jalapenos, yum.
