Frozen Biscuits
My mom is ALWAYS asking me to make her these biscuits that she loves; they have gruyere cheese, cracked black pepper and scallions in them. I don't mind baking, but every time she sees me or I cook for her she wants these damn biscuits and sometimes I don't feel like making them. I was watching a cooking show today and I don't know why this didn't occur to me before, but the guy made biscuits and then froze them to be used whenever. I intend on making two dozen of these biscuits for my mom and then freezing them. I just have one question: When she goes to use them, does she have to defrost them first or does she just throw them in the ofen while they're still frozen? If you can do both, which way will turn out better?

I think she could leave them wrapped in plastic wrap, placed on a plate, and defrost overnight, then bake when required. This will make sure the biscuits don't dry out (if you put them in frozen, and wait for the things to cook through entirely, the outside might be a bit dry).
I've done biscuits straight from the freezer, and they just don't come out right. They are a bit drier and feel denser.

You could even defrost on very low power in the microwave. It's a pretty good way to bring already-cooked breads and biscuits back to life, and it might be worth a try with frozen dough. Good luck!

My dad makes me biscuits and freezes them for me all the time. He makes the world's best biscuits and I can't bake one to save my life, despite being a full time baker. :|
Anyway, I just pop my little frozen gems in the oven and let 'em bake up to tasty, toasty perfection.
(He tends to underbake them just a tiny bit so they don't end up yucky for me.)

i freeze dinner rolls all the time when i make a big batch. i wrap them in foil and then put them in a ziplock freezer bag. i thaw them directly from the freezer in my toaster/convection oven and they turn out perfectly.
i'd love that recipe, too!

I am known for my biscuit and scones. I have found that the best way to do this is to make the biscuits and freeze BEFORE baking them. When you (or your mom) are ready to use them, take out to defrost a bit for 20-30 minutes and then simply bake. They will taste best if used within a month.
