Five Star is great, Prune and Freeman's as well. Are you looking for any speicifc type of cuisine....there's also a great Mexican sceney place called La Esquina with beautiful outdoror seating...

my favorite restaurant in soho (well, i guess it's really nolita, but close enough) is cafe habana (cuban food, with a mexican twist). there's only one vegetarian option (the tlacoya de tres marias - fried masa with different sauces on it), but it's delicious, as is pretty much everything else there (and the mexican grilled corn is a must!). it's definitely in your price range but it gets pretty crowded - especially on weekends. they do have larger tables available but you may want to go earlier or on a weeknight. now i'm hungry again...

What about Balthazar or Blue Ribbon?

balthazar and blue ribbon will be too costly. I would think about market table or blue ribbon bakery, or blue ribbon bar (though there's no tables), or you know what would be good? Shorty's32. I think that's the ticket.

here's where not to go: spring street natural. the food there is the pits!

Lucky Strike would be a good bet: plenty of room, solid bistro food and many veg options.

Or Great Jones (tho in Nolita) for good southern/cajun: plenty of fish, but veggie options would be limited to sides...

If Balthazar is out of budget, then Shorty's 32, while a good food choice, would probably be bit too much as well, no?

Wherever you go, get some rice pudding at Rice to Riches on Spring St. after dinner. Ohhh, the deliciousness...

@nosillak: i second the rice to riches recommendation! it's my first stop once passover is over :)
