Looking for a really great creamy fudge. No marshmallow, fluff, cheese or WHITE chocolate. Any other ingredient will work, including sweetened condensed milk. I don't think there'd be whipped topping in a fudge recipe, but that's out too. Hoping to make chocolate and peanut butter fudge, with and without nuts, but any ideas you have, excluding the above would be much appreciated.#

p.s. cream cheese is ok, just no velveeta or cheddar - that kind of cheese.#

I cheat at fudge...not sure why. Probably as this is less sweet and I have never liked the cloying nature of fudge much.
I pour a can of the sweetened condensed milk (or 8-10 oz of homemade) into about 12-14 oz of melted chocolate (semi-sweet or dark), add a tbsp of butter and a dollop of whipping cream. Stir it all up til a little fluffy-like and pour into a buttered or greased pan and cool.
Add nuts if you like too..or dried fruits etc.
For peanut butter, remove about 2 oz. of the chocolate and replace with about a half cup of the PB, creamy or crunchy. Same effect.
:)I always read the actual question btw-#

@sadiepix - I use virtually the same "cheat" as you do. (I don't make my own condensed milk -- I use canned -- and will add some cream next time. I add the butter already.)
I like controlling how sweet it turns out, and the texture is definitely "creamy" so this is an ideal recipe for PerkyMac, imo. #

Here's a peanut butter recipe from Alton Brown that looks as easy as it gets:

I watched the episode but haven't made the recipe. Has a 5-star rating, though.
and # by the way, always.

Oooohhh... this is totally off subject but... how do you make your own sweetened condensed milk? I always read the question, too! #

@sbelle-
It's easy and great in a pinch if you don't have any or prefer to use non-canned goods. It can be canned like a juice/sauce too so you have your own stored as well.
*Sweet Condensed Milk (to equal 1 can/14 oz.)
1 c. instant powdered milk
2/3 cup sugar
3 tbsp. butter
1/3-2/3 cup boiling water
dash of vanilla (opt.)
Mix all in a blender and whip until smooth. Chill until cool and slightly thickened.

I've been using this recipe (adapted from Ghirardelli) for ages! And by that, I mean since I was a junior in high school (5 years ago). It's super easy, and tastes great! I sometimes switch around what kinds of chocolate I use, and sometimes add nuts, peppermint extract, chopped up espresso beans, etc.
14 oz semisweet chocolate, finely chopped
14 oz (1 can) sweetened condensed milk
2 teaspoons vanilla extract
(optional: 1 cup toasted, chopped nuts)
Line a 9x9 or 8x8 square baking pan with wax or parchment paper (I like the Cooks Illustrated method of having overhanging edges on all sides, so you can just lift up the 'wings' of paper and the fudge/baked good comes out in a perfect square). Place chocolate and sweetened condensed milk in a double boiler and cook until melted (or you can do this in a microwave). Stir in vanilla (and nuts). Pour into prepared baking pan and refrigerate until firm (about two hours).

I made a peanut butter fudge recipe from Alton Brown around the holidays that was beyond easy. It was delicious - creamy and rich.
Here's the recipe:
1 cup butter, plus more for greasing pan
1 cup peanut butter
1 teaspoon vanilla
1 pound powdered sugar
Microwave butter and peanut butter for 2 minutes on high. Stir and microwave on high for 2 more minutes. Add vanilla and powdered sugar to peanut butter mixture and stir to combine with a wooden spoon. Pour into a buttered 8 by 8-inch pan lined with waxed paper. Place a second piece of waxed paper on the surface of the fudge and refrigerate until cool. Cut into 1-inch pieces and store in an airtight container for up to a week.
Oh, and I always read the full question, too! #

I knew I could count on y'all! I haven't made fudge since my girls were young. A friend is looking for ideas for a tween sleep-over next weekend, and the girls want to make fudge. All different kinds. Hope they don't bounce off the walls. I haven't looked for recipes, but I was wondering what other flavors or combinations are out there. Caramel? Butterscotch? Sounds disgustingly sweet, huh? I'll bet a chocolate/peanut butter would be really good. She doesn't want a mess or anything where the girls could get burned, like some candy making. We still have all week, so keep the ideas coming! Much appreciated.
