Cooking with liquor?
Can you cook a dish with like, say, Southern Comfort or whisky? I've had vodka marinara sauce, fish and chicken with rum, white wine and chicken marinated in Belgian ale - what else can one use?

I don't know about Southern Comfort (personally I hate the stuff) but regular bourbon is often used in recipes. Tequila can make a good marinade for chicken.

Bourbon chicken is right! I often use Maker's Mark mixed with maple syrup to glaze a turkey or chicken for roasting. I also use it when I cook onion soup, and it is absolutely incredible.

While I don't drink (or even like) So Co, I think it might be a very interesting ingredient to work into a recipe.
Numerous cordials and liqueurs work well in dessert recipes (Kahlua creme brulee, Godiva Chocolate liqueur bread pudding, grand marnier macerated berries, Bailey's Irish Cream gelato, limoncello sorbet/granita).
My hubby sautees onions and deglazes with Jack Daniels to start his bbq sauce.
When I was looking for (and not finding any) juniper berries, I considered using gin then thought better of it.
Back to liqueurs, Chambord. I attended a dinner featuring Chambord as an ingredient in every course. The best was the venison loin with Chambord and blackberry glaze. They even had a fish course, can't remember how Chambord was used for that, though.

I use liquor in about 90% of my desserts. I use a Maida Heatter great chocolate cookie recipe that uses gin-soaked raisins. (I switch out the raisins for dried Bing cherries, though.)
For cooking, I often use bourbon for chicken. Applejack or calvados for my T-giving turkey. I also use stout, ale, cold-filtered sake, and dry vermouth in all manner of stews and sauces.

bourbon and sweet potatoes are a match made in heaven. boil some maple syrup until it's about half reduced, add a slug of bourbon, and use this to coat some cut up sweet potatoes. add a couple of pats of butter and bake, basting occasionally, until they're done.

I cook with liquor more than any one else I know. I buy liquors just to book with them, also spirits. What can use you use? Damn near everthing. What do I use kirshwasser, limoncello, rum. vodka, vermouth, sherry, whiskey, bourbon, chambord, kalhua, tequila, triple sec, baileys irish cream, amaretto, godiva chocs (all flavors) grand marnier, frangelico, nocello, cognac, calvados, port and many different wines. Thats just what I have in my pantry.

aside from the already mentioned "bourbon chicken", I use whiskey/bourbon for a steak marinade on occasion, whiskey/bourbon, brown sugar, some terriyaki sauce, lots of fresh chopped garlic... It makes for a wonderful flavor for grilled ribeyes.

What CAN'T you use it in?
I swear I put booze in just about everything I make at home.
Put some whiskey/bourbon in your BBQ sauce, mix with brown sugar to glaze a roast or ham.
For a weirder take, mix the SoCo with a can of coke (cola or lemon-lime type) and braise a chicken or pork loin it in.
Reduce a good whiskey with a bit of white wine and butter in a pan you made chicken cutlets in, scraping up the brown bits. Add some salt to taste. Sharp yet sweet taste, great with bitter greens.
Almost all the major brand liquors have a website with recipes too, and a Google search for cooking with liquor gets you some great sites.
Soak dried fruits in it and then roll up in a meat and bake.
Use in salad dressing. My whiskey dressing is a hit around here.
Marinate fish or meat in tequila with lime juice and kosher salt...grill.
Soak a steak or chop in some with herbs for several hours and grill/broil.
I could not even begin to list the desserts! Yummy!
