Hilary Clinton's recipe for chocolate chip oatmeal cookies are my favorite cookies in the world and are always popular! I've been making them for many years now and they can't fail. You can google the recipe I'm sure.

I collect cookie recipes...my oldest is a handwritten one from 1854.

The new issue of New York magazine has this recipe for "Flourless Chocolate-Walnut Cookies" that sounds like it will meet your "good and easy" criteria - I haven't made them yet but I nearly started drooling when I saw the picture of them in the magazine!

Lavender cookies with rose-flavored glaze. One of my standby favorites and so perfect for spring! I use u/s butter instead of margarine. Since rosewater can be pricey if you don't go to an Indian or Middle Eastern grocery store (it's dirt cheap if you do), you could always make a glaze with lemon juice instead. Or go nekkid.

Lately I have found a rash of no nuts people. So I been making snickerdoodles and cornmeal cookies (crumiri) these are so good and easy. Ivonne over at Creampuff in Venice uses a recipe from Fr. Orsini http://creampuffsinvenice.ca/index.php?s=cornmeal that is very close to mine. I add some lemon zest in mine.

I tried no-bake cookies the other night when my oven went out. Easy enough to prep (mix cocoa sugar, peanut butter and butter; melt. Mix in oats and vanilla).
But they took overnight to set, very frustrating. And man were they sweet.
I think my favorite cookies are Mexican Wedding Cookies (Aka Russian Teacakes if you swap the pecans for walnuts). So buttery, and I love how they crumble in your mouth. They're pretty easy to make, though there is a hands-on element with the rolling. It's a recipe I remember making as a kid, and my sister has been making them since she was 12. They're pretty straightfoward. And now I want some.

For cookies, I use Cooks illustrated recipes, as they are very reliable. I also go to allrecipes.com, or recipezaar, and look for 5 star recipes. 9 times out of ten they are right on.

These are some seriously delicious triple chocolate espresso cookies. I recommend them 100x over. I've also tried the dough-freezing trick and it works perfectly.

My new cookie invention:
The Shadow
named after one of my dogs who is the same color as the cookie.
1 1/2 sticks butter
1 cup brown sugar
1/2 cup sugar
1/4 cup peanut butter
2 teaspoons vanilla
2 extra large eggs
1 3/4 cup flour
1/2 cup cocoa
1 teaspoon salt
1 cup chocolate chips
1/2 cup chopped honey roasted peanuts
extra chopped honey roasted peanuts
Mix together butter, sugars, peanut butter, and vanilla and beat until light and creamy. Add eggs and mix well. Add flour, cocoa, and salt. Mix to just combine. Mix in chocolate chips and peanuts. Drop by heaping tablespoonful on parchment lined baking sheets. Top with some of the extra chopped peanuts. Bake in preheated 350 degree oven for 10 - 11 minutes. Slighlty undercook for best results. Cool slightly on pan then remove.

Here is a good recipe for Snickerdoodles:
Ingredients
2 3/4 C. flour
2 Tbs. cream of tartar
1 C. butter
1 1/2 C. sugar
1 tsp. baking soda
1/2 tsp. salt
2 eggs
Directions
Beat until light and creamy. Add dry ingredients and mix thoroughly. Chill 1-2 hours. Roll tsp. of dough into balls; roll in a mixture of 2 Tbs. sugar and 2 tsp. cinnamon. Place 2 inches apart on ungreased baking sheet. Bake 8-10 minutes in 400 degree oven.
