Chocolate Fountain Freak Out
I have aquired a chocolate fountain for my double party weekend. Question of the day:
Things like cut apple slices and bananas get brown and creepy. Should they be treated first? I am also thinking about:
oreos
pineapple mango kiwi skewers
mixed fresh berry skewers
homemade marshmallows with bowls of toasted coconut and graham crumbs
biscotti
kettle chips
pretzels
Anyone dealt with one of these bad boys before? Tips and ideas?

I've seen the chocolate seize up with overly juicy fruits like pineapple. Not pretty.
Just make sure all your fruit skewers are prepared before your guests arrive, and keep them on a layer or two of paper towels. There shouldn't be any trouble then.
Fresh french fries would be a pretty good idea for dipping too, and the residual salt (if any salt falls into the fountain) would add a nice salty balance to the chocolate.
Also, as a precautionary measure, keep the coconut and graham crumbs a bit distanced from the fountain, lest guests get the idea to coat the marshmallows in them first, then go for the chocolate. You definitely don't want anything besides chocolate in the fountain.

I have a fountain at home, for chocolate, banana's are a must, so is pound cake (or timbits!)
I also use my fountain for cheese sauce, bbq sauce or a raspberry sauce...the possibilitys are endless!

Also, those frozen, pre-fab Sara Lee cream puffs are great for dipping, as are brownie bites, cookie bites, and those candy orange slices.

p.s. Iced Capps are the best thing on a hot summer day! Screw starbucksfrapps, I can get my iced capp on for 1.79 =P LOL

Others are giving wonderful food ideas ... Here's a few tech tips:
* Make sure the base of the fountain is level (use a real level) all the way around before installing the mechanism on top. Otherwise, the fountain won't flow evenly.
* Use either fountain chocolate (Sephra and others make it) or chips with a little vegetable oil melted into it to get the right consistency.
* Make sure the chocolate stays well-heated with enough (but not too much) chocolate in the fountain's bowl. Not doing these things right will cause other flow problems.
* Finally, practice all this at home before your events! Practice makes perfect on one of these beasties.

Trader Joe's more than a pound bars have the right around of coco butter.
That is what I use. When I do the choc fountain I put out these items;
Honey graham sticks
Marshmallows
banana chunks (cut right before you announce the fountain is ready)
strawberries
dried apricots
lady fingers and pound cake
pretzel sticks
rice krispy squares cut small
ritz crackers
pineapple
costco cream puffs
I put out spoons and paper plates and encourage people to put their chocolate on the plate and dip from there.

Don't forget the cantalope & honeydew melon and for gosh sakes where ever you do it get a plastic table cloth for underneath these things can get messy.

Potato chips are essential! But make sure they're kettle cooked, not regular (too flimsy).

There was a huge one at a wedding with lots of things to dip, but they also provided small plastic cups alongside the plates, so you could pour chocolate into it, and dip at your table. Maybe not as much fun, but much less chance of wearing the chocolate.

This is soooo up my alley.:) Your skewers sound great!! I Love stuff like this...Done this a couple of times with my friends-always have fun.
Here are a few ideas:
Peanut Butter Cookies
Brownies
STRAWBERRIES-can't forget them
Chessecake
Oreo balls-oh so good (crush oreos and mix with softened cream cheese, ball up and put in refrigerator/freezer to harden, set out and enjoy!)
Pound Cake
Angel Food Cake
Rice Crispy treats
Shortbread Cookies
Peanut Butter Sandwich Crackers - sounds odd but oh my how yummy. (I've made my own but you can get the Ritz kind)
I allow people to skewer and dip at the fountain but also give the same option as Jerzee. Less people around the fountain that way..:)

I personally dislike citrus with chocolate, but lots of people love it. What about orange and/or tangerine segments?
Also, sounds weird, but mild or medium sharp cheeses are delish with chocolate. Something along the lines of Monterey jack works really well.

I recently passed by a candy store that had candied orange rinds dipped in chocolate. I saw someone eating one and thought at first it was a chocolate dipped french fry!
