Bread Baking in a Dutch Oven
Hey All!
I've seen the no-knead bread recipes that are baked in a dutch oven. Can any bread recipe be baked in a Dutch Oven? If so, how would the baking time and temp need to be adjusted?

This might be a useless response, but I've baked quick breads in a small dutch oven (5 qt.) and they're usually in for 45 min - 1 hour. Maybe 5 - 10 minutes less than the traditional method. Not sure about yeast-based bread though since I've never made it without the dutch oven.

I've made quite a few variations on Lahey's no-knead bread, sourdough black olive being my favorite. I really love the method. Generally, use a recipe that calls for about 3 cups flour. Bake in a preheated 4.5qt dutch oven. Cover with lid and bake 30 minutes, then remove lid and bake another 15 to 30 minutes. Remove it when the loaf looks done.
I've not tried any sweet-type breads. Not sure that I would, either.

I bake bread in a dutch oven now and then, most recently some rye. I don't preheat the dutch oven, I let the dough rise in there, but not fully, because I figure it's going to do a lot of rising as the dutch oven begins to heat. I usually bake for about an hour, and take the lid off for the last 10-15 minutes so it browns a little more.

Dutch ovens are good for baking any crusty bread that you'd normally bake at high temperature. You get good heat transfer from the preheated pot (same as if you use tiles) but the lid holds in the steam so you get better spring. This works even better than trying to put a pan of water in the oven, or spraying the whole oven.

Just a quick "heads-up": while following the Cooks Illustrated method for baking bread in a Dutch oven, the plastic handle on the lid of my le Creuset popped apart into two pieces.
You may wish to remove the handle when using this technique.

I recently made Jim Lahey's (from the Sullivan Street Bakery in NYC) No Knead bread. (http://thecuttingedgeofordinary.blogspot.com/2008/04/this-is-yet-another-recipe-from-new.html). There's a few photos on my blog. It came out wonderful! Cripsy and delicious - the best bread I've made so far. I used a cast iron dutch oven to make mine.

you can buy an all metal le creuset pot knob for about 8 bucks at bed bath and beyond or williams sonoma. i replaced the plastic knob on my rachael ray dutch oven just for baking bread.
