Bittersweet chocolate vs. semisweet for Passover cake???
The recipe calls for semi sweet, but I bought bittersweet by mistake. Can I use it anyway?

I just watched a taste testing on bittersweet chocolate today on ATK. Some bittersweets actually tasted more like semi-sweet. How sweet does it taste? If too bitter, I don't see why you couldn't add some sweetened cocoa powder (their suggestion), sugar, or even choc syrup or honey.
If you're not a member of Cooks Illustrated, let me know what brand you have and I'll see if they mention it.

scharffenberger. twelve bucks worth!!!! and i don't like to eat bittersweet, so it would be wasted if i couldn't use it. thanks, perky, i subscribe to both magazines but haven't found much use for their website.

Ghirardelli bittersweet was the winner because it tasted MOST like semi-sweet. Imagine that!
Can you use Dutch processed cocoa powder? Or add sugar? I know they added water to their recipe and that took away the gritty feeling that you sometimes get when using powder. I'm not too familiar with Kosher (although I'm doing my own version of Passover - I sure could use those 7 Blessings), so I don't know if my suggestions would work for you.
Personally, I'd use it (it's excellent chocolate), but just increase the sugar content. Let me know if you're able to make your cake and how it turned out. Lots of luck and blessings cybercita!

thanks perky! the same to you! i'll let you know how the cake turns out. it calls for 12 eggs and 8 oz of chocolate, so how bad could it be??

the recipe says it serves six to eight. the author {maida heatter} must have some really big eaters she's feeding!

I make flourless chocolate cake with bittersweet. The recipe calls for 8 oz. chocolate and 1-1/4 cups sugar. You could always adjust the sugar in your recipe if you want it a little sweeter.

the cake was just about what you'd expect from a passover cake. nice and chocolatey, though. it would have been a lot better if i had made it in the right pan. i made it in a bundt pan instead of a tube with removable bottom, and it stuck like crazy. fortunately, my hostess's mother is an interior designer and managed to slice it in such a way as to hide its shagginess.
