Zucchini Ideas?
My dad unloaded a lot of zucchini on me. I've thought about putting it on foccacia bread or in soup, but I want something different. Something I've never done with zucchini before. Does anyone have any suggestions?

Make zucchini parmagiana - treat it as though you would eggplant.
Slice vertically very thinly and grill with a baste of EV olive oil, oregano, basil, (with or without smashed garlic) S&P and a splash of your favorite vinegar.
Make a veggie lasagna, using zucchini diced very small and sauteed with onion and garlic as one of the layers. (You can incorporate a layer of mushrooms treated the same way and eggplant dice as well.)
Ratatouille!

you can stuff it, like a zucchini boat. cut lengthwise and hallow out inside but save it for the stuffing. i like to make it with turkey meat, veggies and seasoning...almost like a burrito. you can find some good recipes on line for this and other things. grill them up as well if you want for a side dish or put on a sandwich.
you can make bread/muffins. your soup idea sounds good as does chiffOnade's parm and lasagna idea. t

I love all the suggestions made so far, as zucchini is one of my favorite vegetables and can be grilled, fried, baked, broiled, put in casseroles, or even julienned with some carrots and eaten raw or slightly sauteed. If I had more than I could use before spoiling, I would definitely make zucchini bread and muffins and freeze them. Such a treat when it is no longer in season. Lucky Girl!

I love raw zucchs cut on a mandoline into really thin julienne "fries" and tossed with dressing. (They also saute well in that shape.) I had that way back in cooking school and forgot all about it until Perky mentioned it!

not the healthiest option but the mention of julienne fries gave me an idea, you can bread them like a mozzarella stick, serve with sauce or a light chive sauce.

Check out the entry, "my favorite side side dish," on the Smitten Kitchen blog. She sautees almonds and then just barely cooks zuchinni with the almonds. It is DELICIOUS and fast and easy. The recipe calls for cutting the zucchini into matchsticks but I never take the time to do that, just slice the zucchini. Try it, you won't regret it!

When my neighbor brought me some very large zucs last summer, I did the stuffed thing. They were seedy because of the size, so I didn't use the center for the filling, but I made a stuffing with spicy sausage, dried ciabatta, egg, s&p, parsley, white wine or milk, thyme, parmesano reggiano, evoo. Lidia Bastianich has a good recipe that you can use or embellish to your own taste. I baked those (the two halves) for dinner for two of us and still had it to eat for three days for lunch. It is so good, you just don't get tired of it.
I also make a veg chili that I replace the eggplant with zucs (not a huge aubergine fan), lentils, beans,and a whole butt load of vegs with tomato sauce, veg broth, herbs and chili seasonings. So great and hearty, you don't miss the meat.

recipe that I liked. I'd also make a few zucchini breads, some regular and some chocolate, and freeze them.

I make these killer ">Cheese Rice Burritos which are filled with rice and zuchinni. You can also try them in ">Roasted Brocoli and Zucchinni.
I would also enjoy these ">Fried Zucchinni, by Giada de Laurentiis.
I also make a zuchinni and rice casserole... where I mix cooked whole grain rice, cream of mushroom soup, sauteed zucchini and onions, lots of grated cheddar cheese, season with some olive oil, salt and pepper. Mix it all together in a casserole dish and bake in an oven for about 30 mins at 350F. It's delicious.

I have one word for you: zuccanoes.
Bar none, the absolute best thing that can be done with zucchini. And though it calls for mushrooms and onions, you can put any old thing you want in there. Cheddar and Swiss? Use your favorite cheese. The nuts are key though, for crunch.

If you havent had zucchini bread before you really must try it. It's like a moist teacake like banana bread, and the zucchinis add a lot of moisture (the flavor is so mild that you don't really taste zucchini at all).
And , of course, easily made as muffins (and frozen, if needed).
Another recipe I like is one of the easiest sauces ever, perfect for salmon but could be good with other fish if you prefer:
Cut half a pound of zucchini into chunks and boil it in 1/4 cup lightly salted water until tender. Blend until pureed, add 2 tbsp butter, blend again, season to taste.
So good. It's from Rozanne Gold's Recipes 1-2-3 (3 ingredients: salmon, zucchini, butter).

Zucchini fritters, Mario Batali has a recipe on Food Network, very good as an appetizer with some creme fraiche. I forget what he served them with, but they were delicious.
Sauteed zucchini--just a touch of oil, med. heat, sliced zucchini, a little finely crushed garlic, sautee, finish with a drizzle of sesame oil, toasted sesame seeds, and sliced scallions. So simple, so good.
Earlier someone mentioned grilled zucchini--my favorite.

If you DO want to make a soup:
4–5 zucchini, shredded in a processor
1 large (60oz?) can of tomato juice
1 large onion, medium dice
1/2 cup of sugar
3 tbsp olive oil
Sautee the onions in the oil. When lightly browned, add the sugar and let melt. Add juice and simmer for 30 minutes. Then add zucchini and simmer for another 30 minutes. From there you can have it hot or cold and it's a family favorite.
I like making stir-fries with zucchini, onion, mushroom, and either tempe or tofu. A little soy sauce, minced ginger, sesame oil. It's delish. Serve over brown rice.

I make hash browns with them or just dice them a put them in a nonstick skillet w/the herbs of your choice. It's amazing how once they become crispy they are a whole new experience. Also a REALLY goot way to get kids to eat them!
