What Easter treats will you bake?
Do you bake cut-out cookies & decorate? Special bread or pastries? Make a unique shaped & decorated cake or cupcakes? Fill baskets with homemade candy? I shutter to think anyone actually makes their own PEEPS--ha!

PEEPS? *shudder*
I don't bake very often, neither my husband nor I have a sweet tooth, and we don't eat much bread, but I actually saw something that looked so good. Ina Garten made a "Mixed Berry Pavlova" on a recent episode, it looked really good. I'll have to wait and see though, we're traveling down to NC for the holiday and have to see if there's time and opportunity to make it.

I have a great bread recipe book that I bought while I was living in the UK the first time, and I have tried to make almost everything in it - one of those recipes being Greek Easter bread, which is fantastic...although I haven't ever put the coloured eggs on top of it, it still tastes really great. Although, the last time that I made it, my mother insisted that it needed more sweetness, so she madea vanilla glaze and drizzled it over the loaf. Honestly, it wasn't necessary, but it did make for a really tasty little addition. I might have to keep it up!

My kids and I always made an Easter Bunny Cake from two 9" rounds. One was the head and the other was cut so that the middle formed a bow tie and the edges were the ears. So simple and they loved to decorate it. If some miracle occurs and I get to spend Easter with my 3 year old granddaughter on the opposite coast, that bunny will be resurrected.

I'll probably make a lemon curd tart or lemon bars, as well as some kind of elaborate cake for the multi-family Easter dinner that my family joins every year. Last year it was this "Almond Praline Cake with Mascarpone Frosting and Chocolate Bark" http://www.epicurious.com/recipes/food/views/237313 from Bon Appetit. It was incredibly popular, but I'm not really a fan of bringing the same thing to a party twice, so I'll probably find another awesome recipe to try out. If anyone's looking for a knockout cake though, I highly recommend it! (I left out the chocolate bark, and covered the whole cake with chopped almond praline instead)

@srhcb---what's your best cut-out cookie recipe? I'm somewhat sugar cookie challenged:( Icing? Sprinkles?

I'm afraid you're asking the wrong person. I'm seriously impaired when it comes to any dough that must be rolled. In fact, until I acquired de facto grandkids I never made any rolled cookies except gingerbread, which is very tough and forgiving.
Since the kids aren't fussy, (they would gladly just eat raw dough and frosting right from the bowl), I just use a standard recipe from my 1963 edition Betty Crocker's Cooky Book that makes a fairly sturdy, if not overly tasty, cookie, and a simple Royal Icing of 2 T water to 1.5 C powdered sugar.
Even at that, a lot of dough/cookies end up getting stuffed down the garbage disposal or thrown into the garbage can. The kids always think this is great fun too!
On the rare occassions when we actually end up with some mixed, rolled, cut, baked and iced cookies we get out the cookie coloring pens and draw up a storm!

A couple years ago, I decided that I was going to bake bunny-shaped bread. We ate a lot of disfigured bunnies (the first one sort of looked like a gargoyle) before they got good enough for me to send the to work with hubby to give away. By Easter, I had a rather attractive bunny at the table, and he tasted just as good.
Last year, I made buns that were "heads or tails." The heads had ears and noses, and the tails were just round buns with a smaller round ball on top.
This year, these will no doubt be some sort of bread because I always bake bread, but I also bought a lamb cake mold, and I'll bake some kind of cake in there, either for Easter dinner or as a gift for the inlaws.

@srhcb---I hear ya on the roll-out cookie failures & I have tried & wasted way too may recipes & ingredients. The one fairly successful cookie was the Land o' Lakes butter cookie with a hint of orange flavoring. Cookie coloring pins--wow, have never seen them & I can see why kids would eagerly help decorate!
@dbcurrie--I envy your baking talent:)
Anyone making the coconut cookie "nests" with the jelly beans or cupcakes?
