Vital Wheat Gluten, Where Are You?
I received a breadmaker as a gift last year and have made various breads with varying success. The thing that is driving me nuts is that for all the rapid cycle recipes, you need vital wheat gluten, and I have had absolutely no luck finding it anywhere!! Where do you get this elusive ingredient?

Have you tried King Arthur Flour?

I was a manager at a small health foods store and we sold it there, it was made by Arrowhead Mills. I feel like stores such as Whole Foods should have it.

Whole Foods and The Fresh Market both carry it. I've had no luck at regular grocery stores, though.

Acme / Albertsons food markets carry Hodgson's Mill brand. I usually find it by the specialty flours, kinda hidden away.
Good Luck.

I've seen it in the organic section of regular supermarkets, and I've seen it in the bulk section of the local co-op.

I can find it in my henry's or wild oats supermarket. I also use it to make seitan, so if you have an asian supermarket maybe they sell it.

The vegetarian cookbook I just finished editing says it's available at "local food co-ops and natural food stores" -- that sounds like Whole Foods to me!

I bought mine at Wegman's....and I do think it was in the organic section.

I second King Arthur if you can't find it locally.

Bob's Red Mill brand sells it, usually in the health food aisle of the grocery store. My small-town Kroger has it.

In NYC you can find it on the second floor of Fairway.

Walmart in the baking section near the flour. It is Hodgkins Mills. Works great on whole grain breads......causes them to rise more easily. It's a must!

Any health food store should have it... it's used on it's own or to add to bread recipes.

Thanks so much for the tips. I feel like I'm not going crazy now. At the various grocery stores (organic or not), health food and bulk stores I've tried, I've gotten funny looks when I asked for it. I'm going to try the King Arthur website mentioned.
