Spinach Help?

My adorable but silly husband put away all of the groceries yesterday afternoon and put my fresh (like, just-out-of-the-ground fresh) spinach directly into the fridge, not the crisper. This morning, I opened the fridge to find all of that lovely spinach wilted and terrible-looking.

I put it into the crisper and am planning on giving it an ice-water bath later to try and perk it back up. Any other ideas? Will the ice-water bath damage it? How do you re-perked wilted spinach?

The ice bath might be a bit harsh. Cold running water and put it in the crisper wrapped in a damp towel should revive it.

If you freeze it, you might as well cook it. I'd let it sit in very cold water for about 10 minutes, then drain and wrap in damp towel as crazyspice suggested. I know it would have most likely frozen in my fridge, unless stored in the crisper drawer. That would turn the leaves very dark and they'd be wilted for sure.

Hee! Just ice-water, not the freezer. I wouldn't put my spinach directly in the freezer; I'm not crazy. :) :) :)

I know what you meant - the ice in the ice water is too harsh for fragile leaves and could freeze them - sorry I wasn't more clear sheeats. Hope you can revive it and enjoy. I love spinach in a million different recipes, but don't eat it raw as often because it's so darn hard to find really fresh, so I know your pain.

You could try reviving them by soaking them in a water-vinegar bath. For every 2 cups of water add a tablespoon of vinegar, let soak for about an hour. Be sure to give them a good rinse off after (gently, of course) if you don't want a vinegary aftertaste.

Why bother with reviving 'em? Just cook them down with some sautéed garlic and olive oil. (Or bacon, if you're so inclined) Mmm... Tasty, easy and a great way to enjoy your aesthetically displeasing (but fresh) greens.
