random creations!
Tonight I was craving a red curry soup type concotion, but I got home too late from work to go grocery shopping or get delivery so instead I improvised, using a spicy ramen mix, brown rice, lime juice and coconut milk, plus random veggies in my fridge. Somehow it turned out really good, not to mention quick and easy. Does anyone else have random recipes that they've created out of desperation that are now in their regular rotation?

Last week someone was asking for poker party recipes and I posted something that I completely made up the night earlier. It was a mixture of cheddar cheese, mushrooms, bacon and broccoli that I wrapped in egg roll wrappers and fried up. It was super quick and tasty. Also, when I was in college and constantly broke, I had a go-to dish that was pretty much an accident also. My boyfriend and I still eat it and love it. It's spaghetti or any other kind of pasta, cooked al dente. You simply toss the pasta with olive oil, butter or margarine- whatever you have on hand, and then you season with garlic salt, cracked black pepper and lots of parm. Good stuff.

I had to get rid of a bunch of leftover ingredients, so I ended up making a quiche that let me use up the last of my half-and-half, eggs, bit of ground hamburger, bit of spinach, bit of bacon, bit of cheddar, and bit of portabello mushroom. I added some Penzey's Northwoods seasoning (which I'd gotten as a free gift from the store and had never used, not being partial to spice mixes) ... it came out astoundingly well! And the Northwoods seasoning is now my go-to spice.

I'd say half my meals are totally made up from whatever's in the fridge. Last week, I made some really good tacos from the very bare remains of whatever was in the fridge. I find that some of the best things I've made were unplanned. And if it fails, oh well! At least you used up the ingredients before they were left to go bad in the back of the fridge.

In university I made up Rosemary and Lemon Pepper Toast - like garlic toast but not garlic. It's great with soup!
Spread butter on bread, sprinkle with rosemary and lemon pepper, toast in toaster oven. Yum!

I wanted to make cookies but didn't have any eggs or butter or really even milk (I borrowed 1/3 cup). Or a recipe.
I ended up mixing together 1 c. ww flour, 1/2 c. all purpose flour, 1 t. baking powder, 1/2 t. salt, 1/2 t. cinnamon, 1/2 mashed large banana, 1/3 c. oil, 1/3 c. skim milk, 3/4 c. sugar, and 1/2 c. each of walnuts and chopped dried apricots. Baked for almost 20 minutes at 350* F.
Came out pretty darn tasty!
