OK to freeze cooked mussels? What else could I do with them?
I've got about 18 or so uncooked but alive mussels hanging out in the fridge (I bought way too many for a paella). Since last night's leftover paella is today's dinner (I made way too much paella), I need to figure out what to do with them.
My first thought is to cook them, take them from their shells, and freeze in their liquor (for a future pasta or whatever). But I have no idea if this will produce a good result in the end.
Any thoughts or tips are greatly appreciated. Cooking and eating them tonight/tomorrow is not so feasible, though. I don't know if they'll survive until Tuesday.
