Leftover ham ideas?
I got waaaay too much ham for Sunday's feast and already have given some away. There's still half a hog left and I need some ideas quick.
Anyone got anything good to suggest?

Ham sandwich - add asparagus spears and cheese for a nice fresh taste.
+ add to your salad (I mix my leftover ham with hearts of palm and olives..yummy.)
+ add to a hearty winter soup like potato or bean.

How about- quiche with ham and asparagus, bean soup, ham salad for sandwiches, eggs benedict (you can put asparagus with it too), ham buns- (ham with stone ground mustard and butter wrapped in foil and warmed in the oven), ham and chees omelets, scalloped potatoes with ham. That should just about take care of the rest of the ham!

- dice it up & freeze some of it in ziplocks- great to have on hand as a quick toss on homemade pizza, omlets, scalloped potates, casserole.
-I made ham & bean soup with some of mine. (yum!)
-I also made a ham & chicken & swiss strata with some eggs, bread , mushrooms & milk I needed to get rid of. I ate 1/2 for dinner last night and 1/2 for breakfast today- yum!

Host a ham themed brunch this weekend--have any or all of the yummy suggestions from above. Tell everyone else to bring non-ham dishes, ie fruit, veg, salad, bread, bloody mary fixins, mimosa fixins because you have the main dishes covered.
For lunch or a light dinner one day this week have a frisee salad with a couple of poached eggs and fried diced ham instead of the tradtional lardons.
Make Waffle House's "Scattered, smothered, covered, chunked and diced" or something like that. Shredded Hashbrown potatoes, onions, tomatoes, ham, cheese. Sautee everything (except cheese) together, when the potatoes are cooked and developing a nice bottom crust, flip, and top with cheese. Let the bottom develope a nice crust, slide onto a plate and enjoy!

Ham in scalloped potatoes, chopped up in soup, ground up and mixed with mayo and relish/pickles for a deviled ham spread. Freeze some for later, too.

I've been eating toasted ham and brie on crusty bread spread with whole grain mustard, and I don't think I could eat one more. I think I am going to make some mac & cheese spiked with ham, just like mom used to make. And if I still have some left its going in the freezer.

I was going to suggest mac and cheese. My grandpa used to cook a ham JUST to be able to dice it up and add it to his mac and cheese. Also, I'll have to find the recipe for you- if there is one, but I go to a lot of BBQ's and parties with Mexican families and someone always brings a pasta dish that has chunks of ham in it and is bound together with "crema" or sour cream and cheese. It's really delicious, I doubt it's Italian ... or Mexican for that matter. Also, because I'm now obsessed with egg roll wrappers and wonton wrappers, maybe you can dice up some of the ham, add some cheese and broccoli and stuff it all in an egg roll or wonton wrapper. Sounds yummy to me ...

Ham and Potato Soup
Ingredients
3 1/2 C. peeled and diced potatoes
1/3 C. diced celery
1/3 C. finely chopped onion
3/4 C. diced cooked ham
3 1/4 C. water
2 Tbs. chicken bouillon granules
1/2 tsp. salt, or to taste
1 tsp. ground white or black pepper, or to taste
5 Tbs. butter
5 Tbs. all-purpose flour
2 C. milk
Directions
Combine the potatoes, celery, onion, ham and water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in the chicken bouillon, salt and pepper. In a separate saucepan, melt butter over medium-low heat. Whisk in flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in milk as not to allow lumps to form until all of the milk has been added. Continue stirring over medium-low heat until thick, 4 to 5 minutes. Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.
