Lancashire Hotpot
I've recently had a request from my husband to make a Lancashire hotpot from scratch, the ultimate comfort food of his youth. I'm not a huge fan of cooking with kidneys in general, and was wondering whether or not those of you who have made Lancashire hotpot feel that the kidneys are absolutely necessary. Also, all the recipes I'm finding call only for onions, but I'd like to add in more vegetables -- leeks, parsnips, turnips and carrots. Has anyone else had success in this area?

Thanks, renzata! I asked him if he minded the lack of kidneys, and he said no. :) He doesn't remember exactly what used to go into the hotpots he ate as a child (being that he was a kid and all...), but as long as there's lamb and veg with potatoes on top, I think he'll be happy. :)

That's the beauty of cooking! Unlike baking,(no offense bakers) it's not rocket science. Well ok there is some science (McGee) but go ahead and add some more veggies if you'ld like. However, you may want to keep in mind that adding more veggies may add to the water content and make the insides more soupy, you can prevent this by cooking the veggies down beforehand. Bon Chanc:)
