split pea soup or white bean soup with the bone.
with some of the meat: grind it up with a bit of onion, green pepper & mayo for a great cracker spread.

One of the rare times I make a casserole is when I have leftover ham. Thick noodles, ham bits, sour cream, swiss cheese, sauteed onion and red bell pepper, lots of fresh ground pepper, peas (in or on the side), maybe some heavy cream if I have some, and top it off with those durkee canned onion rings. It is so casserole- retro, but so darned good.
We also always reserve enough to make croque monsieurs, and if I have a way lot leftover, I freeze slices to use for eggs benedict later.

If I had a leftover ham bone, it would go in a pot with some freshly (less than a year, that is) dried kidney beans, onion, celery, and carrot. A few scraps of the meat are good too, but the main thing is that bone. Maybe I'll be able to scam my parents out of theirs.

Yes, bean soup, absolutely. But one hint, if I may. When you taste that soup near the time it should be done, if it isn't quite "together", just needs a little something, I toss in about a tablespoonful (15 ml, for the metric-oriented) of tomato paste. It seems to enhance things quite mysteriously.
As to the ham itself, I use bits of it in a casserole with potatoes and sour cream. Bread crumbs on top, for crunch.

We let the ham bone from our xmas ham add the pork flavor to a big pot of chicken pozole

The improvement provided by tomato paste isn't really so mysterious; tomatoes are one of the more significant natural sources of glutamates, the source of the umami flavor. There are some in the ham too. Also, the tomato adds a bit of acidity, which you might not notice unless it's not there.

My absolute favorite thing to do with a leftover ham bone is "baked" beans. A crock pot is great for this. Italian white bean soup is a close second.

Scalloped potatoes and ham - I actually look forward more to this than the freshly baked ham.
