Going to pick strawberries... now what?
A local orchard/farm just notified me that their strawberries are ready for picking this year. I'm very excited, but haven't quite figured out what to make with them. Last year I made some good strawberry shortcakes, but would like to try something new this year. Any ideas? I normally come home with so many of them, there's not enough time to just eat them by themselves before they go bad.

Freezer Jam - fast, super easy and tastes like fresh strawberries all year long, and is a hundred times better than canned (which is work). All you need are berries, sugar, lemon juice and pectin. Store in small glass or plastic containers, because it doesn't last a long time once opened, but lasts up to a year in the freezer. There's always a recipe on the packaging of the pectin, but here's one:

If you've never tried it, you'll be amazed. Make as much as you and anyone you know with a freezer has room for, because you'll be devastated if it's all gone before you can make more. Warning: If you gift any, they'll be back for more and more. Yes, it really is that good!

I know your probably looking for things to freeze but I've made strawberry bread, which doesn't sound great but is really, really, really, good. Did I get me point across about how good it is. Also we've been on a strawberry/spinach salad kick. It's so simple.

I have always had great success just "hulling" the strawberries (taking the tops off) and then rinsing them gently, slicing them (I add a little sugar at this point but you don't have to).Put them in quart sized freezer bags, then into the freezer. I use them all winter long for strawberry shortcake. You could freeze them whole but then the ice crystals break down some of the cell walls and they come out "punky". Bon Chanc!

I'd go with preserves and jam made the old fashioned way. Freeze some by hulling, washing and setting on jellyroll pans in the freezer. When they are frozen solid, put them in a ziplock bag with the date you froze them.
Fresh Strawbs with Balsamic Vinegar. OMG...great stuff!
Strawberry Rhubarb...anything!

Strawberry pie is very popular here, topped with whipped cream. Strawberry cream roll. Strawberry Rhubarb pie. Strawberries with cream. Strawberry ice cream. Ina Garten's pavlova with berries - that is to die for!
As much as I love all of the above, or just eating sweet strawberries out of hand, I buy tons to make the freezer jam, because it isn't as sweet as regular jam and tastes unbelievably good on ice cream, cakes, toast. My mouth is watering just thinking of it. Too early for them here.

I'll also add my vote for you to make strawberry vinegar! I had a salad with strawberry vinaigrette at the Boar's Head Inn in Charlottesville, Virginia, several years ago and I STILL talk about it. And yes, I do have a life. haha.
Oh! My suggestion is to puree with a little OJ and sugar and freeze in ice cube trays. Add to drinks: lemonade, mojitos, plain seltzer, other juices, smoothies, vodka tonic, gimlets, I could go on, champagne or sparkling wine would be really good, too.

OK, I may be a little redundant here, but my obvious choice would be strawberry vodka. After your vodka is infused, make a strawberry short-tini. ( at the risk of extreme ostrasizing from SL hate groups) Use your strawberry vodka, vanilla vodka, a couple of dashes of grenadine and some cream. (or do it in the blender with vanilla ice cream). Shake it up with ice and strain into your chilled martini glass - float some berries. You'll be as happy as a little girl!
My next choice would be strawberry ice cream. You could add some chopped white chocolate to make it a bit more decadent. Ooo-la-la...
And may I add, I am very jealous. In about three more months here in MI we may have stawberries, God willing.

BTW, Frederika - I don't pity you your short strawb season because I'm too busy envying your blueberries!!! MI blues rock... :D We hope to get there this summer for some of the blueberry festing that goes on at South Haven.

Strawberries in march!?
You must be very lucky. We don't get them out in Ontario before June (for self-picking). Freeze them, make smoothies, they'll last you at least a good 6-8 months.
Freeze them in a cookie sheet in a single layer first, then transfer to gallon zip-top bags. It makes for a much easier time when retrieving.
@chiff0nade: ON wild blueberries rock too! I never knew how blueberries were supposed to taste like until I went through a liter of those =P

and I agree with the suggestion of strawberries with balsamic vinegar, add blueberries, raspberries also, and a little sugar... and to make it fancy, after it's been sitting a while and you're ready to serve, scoop the berries into a martini glass with a little whipped cream on top.

I got some very ripe nice strawberries at the supermarket last week and made no-pectin "freezer" jam in the microwave. Perfect!
2 parts chopped berries, 1 part sugar, and a squeeze of lemon. Cook on high in micro safe bowl for 4 min, stir, 4 more min, stir, and then cook at 1-2 min intervals until it starts to thicken.
(It will thicken more as it cools; cover the bowl, but vent it! It foams up as it get hots, so use a generously sized bowl)

@chiff0nade- Oooooh - blueberry vodka! Maybe I should make use of my new home state's natural resources. Don't laugh too hard.!!! One of my favorite beers is Wild Blue, a truly refreshing, high gravity beverage with the truest blueberry flavor I've had.
The amateur mixologist in me is already working on a blueberry muff-tini - hahahaha - next installment in July! ( I have to beat SL to it - she's probably already stealing my idea, as we speak!)

If you still have a few leftovers after making most/all of the above, they're great in salads. Fresh spinach, walnuts, lettuce, strawberries, kiwi, and mandarin oranges with a light poppy seed dressing. I don't eat cheese, but I am sure it would go well with a mild soft cheese.

I think everyone just about covered the strawberry ideas....I just wanted to put another jealousy vote in! We're still thawing out from last week-end's storm....we won't have strawberries here in WNY until June either. :-(

Use frozen strawberries in hot cereal..helps cool it off and goes nicely with a touch of cream or milk.

I cut the tops off and freeze them on cookie sheets and put them in a zip lock. Oh what a great Smoothie addition!!
