Fresh Ricotta!

I'm lucky enough to have fresh, whole-milk ricotta sitting in my refrigerator. I used some last night for a pasta, but I'd like to make something with the remaining 8 ounces. Any creative ideas would be greatly appreciated!

oooh, there is a great recipe for ricotta fritters in this month's Gourmet magazine. I made it just the other night and it was AMAZING.

It's quick and easy to pull together and very yummy to boot.

Giada from the food network has a ricotta cheesecake that I've tried once. It's really good.

thanks for all the great tips! i've actually decided to make lemon-hazelnut-ricotta pancakes, but i'll have to try out the ricotta gnocchi next time...

Seems to me that Giadda uses ricotta in everything! I'd check Food Network for her recipes.
