Finally!!! A Recipe I Didn't Have to Throw Away!!!
These Seafood Enchiladas came out PERFECT! I'm so proud! I omitted the toasted walnuts; that just seemed weird to me; maybe someone can explain why they were put into the recipe. Anywhooo, here is the recipe:

I'm less concerned about the walnuts than all that cheese. Seems like it would obliterate such delicate seafood.

looks like a great recipe to toy with. i think i'll try it soon. i think i'll replace the garlic salt with minced fresh garlic, rethink frying the tortillas in 1/4 inch of oil, and add some spice to counter some of the creaminess.

It's delish, especially since it sat in the fridge overnight.....I too was concerned about the amount of cheese, but IIRC, enchilada dishes I ate in San Diego and Mexico were pretty cheese intense......

PS - I added habanero sauce and dried cayenne pepper to give it some bite.

Bitter I am glad a recipe went the way you wanted it to.
Your new challenge is to make it a bit different with your own variations.
I would not use seafood and all that cheese myself. This is a nice base recipe for the enchilada curious.

I would like to try a salsa or some sort of tomato sauce; I know one exists for enchiladas......
