Easter Dinner

My family has never really been big on Easter dinner, but this year I'm feeling festive. I usually hate spring and summer here in L.A., but spring has hit so earlier I feel myself warming up to it. It's beautiful here lately! Anyhow, I'd like to make my parents their first, official Easter dinner. I've seen a lot of posts recently that were Easter related, so I thought I'd throw my hat into the ring. I can find recipes fine on my own, I'm just look for food suggestions from all of you. What does the classic Easter dinner entail? What combination of dishes can comfortably be made by just one cook under a budget?

p-bear-if you need any asapargus recipes check out my (help need asparagus!) post earlier this week- everyone was so helpful! there's more than enough 'gus to go around....
I like ham at easter. brunches are fun too- mimosas, egg strata, think fun spring foods. I'm sure folks will have lots of great suggestions.

@P-Bear - "Classic" is in the mind of the preparer!! All of my friends have different descriptions of what is a classic or traditional holiday meal, regardless of which holiday. Me? Anything goes! My daughter usually makes a request for something and we build the meal around it. Sometimes it is very simple and does not require much of a budget. ;-D

When it comes to families and holidays, "Classic" translates as "Traditional". In my mother's family, of Serbian heritage, that means lamb!

I think there is an old saying about "what is an eternity?" ....the answer "2 people and a ham" That being said, if you like ham, you can pick one up for relatively cheap, and have leftovers(they freeze well! chop up for add ins for omlets,quick pizza toppings, scalloped potatoes etc)
I usually pair with a potato dish (scalloped, mashed, gratin-ed... what ever I'm an equal opportunity potato eater- another goodie is pureed sweet potatoes if you wanna go southern) asparagus seems pretty traditional, but if you don't love it, any green veggie would do. deviled eggs(..or stuffed if you're Alice Waters) have been seen many a time in my family as well. We do glazed ham, potato salad, aparagus, corn and biscuits.
I make a coconut cake, pizzelles, siennese almond cookies, biscotti and some sugar cookies and thats all she wrote. It is all easy and its all good.
