Does anyone know the anchovy paste equivalent for filets?
I love the flavor of anchovies and keep a tube of anchovy paste on hand...but I don't know, when recipes call for filets, what the equivalent is. I usually wing it and taste test. Any other suggestions?

Do the recipes call for fillets by count, volume or weight? If it's by count, it depends on the size of the fillet the recipe calls for I guess, but you can eyeball it: a fillet is usually about 1 1/2 inches long, and maybe about 1/8 inch thick. So, the equivalent to a fillet this size would be about 1 1/2 - 2 inch squeeze of paste...
If it's by weight or by volume, I'm pretty sure they would be roughly equivalent. Is your paste concentrated, or just straight up anchovy purée?

According to What's Cooking America, 1/2 tsp of paste is equivalent to 2 fillets. Cook's Thesaurus says that 1 fillet, mashed = 1 tsp of anchovy paste and they note that mashed anchovies are stronger than prepared anchovy paste. RecipeZaar says the 1/2 tsp of paste = 1 fillet, mashed. They also say that prepared paste contains some vinegar, salt and other spices. Likewise What's Cooking America.
Average all that info and 1 anchovy fillet, mashed, yields about 1/2 - 1 tsp of paste. Mashed anchovy will be a bit stronger than prepared paste so adjust accordingly when substituting.
