Calling all pizza makers - what is this tool called?

A friend is looking to buy an item for her budding chef son, who is about to turn 15. It is a spiky roller item that is used to take the air bubbles out of pizza crust after it is rolled out. Apparently he saw this item being used on the Food Network but the hosts didn't identify it except as perhaps a pizza pricker.

Anyone know what this is called or where she could get one?

You may be talking about a roller docker, also known as pastry pricker. It puts holes in pastry, crusts, and pizza to avoid air bubbles. I found it by googling--here's one link, but there are other places that sell it, too.

Yep, thats a dough docker.

Personally, I like bubbles in my pizza dough. Big and puffy, crispy on the outside and steamy, light and doughy on the inside.

It's a dough docker available from Amazon.com

Also check out the King Arthur flour website. They might have one there, (even if they don't have a docker they have lots of great stuff on their site.)

I'm not being sarcastic, but... why would she want to roll the bubbles out? They aren't a huge problem (the sauce usually flattens most of them), and I'm with seyo on this, as I too have always liked bubbles in the crust; is it a special kind of pizza?
