Bunny Marshmallows - Ideas?

I have a giant bag of those seasonal bunny marshmallows sitting in my house staring at me, just waiting for me to use them in something for baking in the spring, but I really can't think of anything for them that wouldn't involve melting the lives out of the poor things.

Does anyone have any ideas on what I can do with them? I thought perhaps of baking cupcakes and putting them on the icing, but that seems almost too easy, although very tasty.

Also, I happen to have found a completely sealed, long forgotten, box of those Keebler Elves' chocolate covered grahams crackers, and I would love to figure out something to do with those as well, if someone has an idea.

Thanks!

Peepacoladas! A bartender friend of mine concocted this last year:

Unfortunately, they are not those type of marshamallows. These are just the plain, Kraft, Jet-Puffed ones that are shaped like little bunnies in pastel colors. :(

This may not be your cup of tea, but I think it's too awesome to not share. You see, I truly hate easter- and historically, easter hates me back. So I was delighted to discover that marshmallow looks delightfully gory when red food dye is applied to an uneven marshmallow surface- such as those that might result from careful tweezing, or, if you're lazy like me and feeling sure that no one will actually eat the finished result, nibbling off all the sugary part. Last easter, it was psycho mutant bunny cake with peeled heads on sticks. This year, who knows?

not particulary spring or festive, well probably the exact oposite but yummy anyway....toast the bunny marshmallows and then smash them between two chocolate covered grahams.

how about a saddle of bunny marshmallow.... or maybe bunny terrine with marshmallow fois gras?

I think the cupcake idea could be AMAZING. Make really tasty cupcakes. (I'm leaning toward carrot cupcakes, myself. Get it?) Decorate them by dipping the tops in whatever frosting/icing/ganache you'd like and then into coconut that you've colored green. Then dip the bunny butts in the frosting to glue them to the tops. You could get creative and make gumdrop flowers, pair the bunnies, use all sorts of candies or cake decors, and well, it could be really great!

Never discount a recipe because it's been done before. Recipes become favorites because every time you make them you make them just a little better.

Chocolate covered Graham crackers and marshmallow bunnies. Sounds like BunnySmores to me!
You aren't talking about something like those "Marshmallow Peeps" are you? Because those are tantamount to toxic waste.

Melt the marshmallows to make rice krispie treats.

Don't diss the Peeps! I even have a My Peeps t-shirt.

Calichef, that is brilliant! and I love carrot cake! Thank you so much!

I love the idea of carrot cake cupcakes!

And my favorite line "...dip the bunny butts..." Sounds like a whole new version of the "Bunny Hop" just waiting to happen!

My kids like those marshmallows in their hot chocolate too. Yes, Easter is in March this year, so there are still a few more hot chocolate days to squeak out.

BaHa LOL! Is that the one that says "Chillin' With My Peeps"?
