Your best fajita recipe!
I want to make a GOOD chicken or steak fajita. I have always used the fajita seasoning packets, but now want to make them from scratch. Does anyone have a good recipe?

buy 2-3 lbs. skirt steak (get the butcher to split/butterfly it for you so it is very thin)
buy tortillas from the local tienda or make your own
marinade: salt, pepper (maybe some onion or garlic powder), lime juice from a lime or 2, add one can beer [whatever you like, I like Modelo Especial]
marinate meat for 4-12 hours or so.
build fire with mesquite chunks
make it very hot and place your grill very close to the fire.
oil the grill lightly
cook the steak 4 or 5 minutes a side.
let rest 4 or 5 minutes while you warm tortillas on the grill.
eat immediately with pico de gallo.
