What's for lunch today?

For me? Hummus, whole wheat pita bread, salad w/lemon juice-olive oil dressing, crispin apple, Coke Zero.

You?

Funny..I made roasted pepper hummus last night and took a bunch of it for lunch with gala apple wedges. (Trying to stay away from white bread products where possible... **sniff**.)

That is really funny - hummus, tahini sauce, whole wheat pita bread and salad with balsamic vinegar/olive oil dressing:-) What are the odds?!

There must be something going around - I also made hummus last night! Today's lunch is said hummus, homemade whole wheat pita chips, baby carrots, and a chopped salad with a balsamic vinaigrette. And strawberries for dessert.

I'm at the office, so I brought a South Beach Diets Cranberry Walnut Chicken Salad Kit.

"It’s a snap to eat lunch with our Cranberry Walnut Chicken Salad Kit. Just toss together our lean chicken cuts, light mayonnaise, tangy dried cranberries and walnuts for a delicious alternative to high-fat restaurant salads. "

I brought a bed of greens to put it on, and it comes with some super tasty whole wheat pita chips (in keeping with the theme on this board, lol) - this is seriously one of my favorite convenience lunches.

I made too much meatloaf last night: http://www.bitchincamero.com/mel/?p=144

Leftovers for lunch today :)

i am not sure... had brekafast late, so I am not hungry yet. Should I make myself a hummus sandwich???? LOL

looking like sushi today

wonton egg drop soup

Cottage cheese, with a bit of cinnamon stirred in. An apple warmed in the microwave with a bit of peanut butter oozing on top. A mini 100- calorie bag of popcorn, and a bottle of water. Simple, but delicious!

I am such a lucky girl today. SO had a business dinner last evening and it ran late; so as an appeasement, I was gifted with a take-away dinner of skate in a citrus beurre blanc with braised kale. Since it was 10PM and I had already reached satiety with several glasses of sav blanc, triple creme brie w/flatbreads and an assortment of olives (my fav dine-alone meal), hopefully the skate will reheat well for lunch.

But should I have hummus with that?

@frederika........trade ya for an american cheese (fresh out of its individual wrapper to preserve the rubber texture) on squishy wonder/ous bread that never molds sandwich?

Husband cooked a huge batch of mabo tofu (ground pork, tofu, bell peppers) last night, so that's my lunch today. I also have Japanese mushroom soup (clear broth with mushrooms and seaweed) to cap my meal. A friend sent me a cannister of loose-leaf Earl Grey Jasmine green tea, so that's been my drink at work. It's great cold.

I think I'll try to defrost some of that soup in the freezer. I made it from tomatoes, zucchini and sauteed eggplant, with some chicken stock for good measure. I'll cook up a little bit of pasta, and maybe use some of that mozzarella (not the yummy fresh kind).

Probably teppanyaki (sp?) in my company's cafeteria. It's surprisingly good - you pick your own veggies (I usually load up on broccoli and bok choy and sprinkle in carrots, peppers and mushrooms) and protein (tofu for me) and they cook it up fresh with garlic, ginger and the sauce of your choice (that would be low-sodium sweet chili). Served over brown rice. I'm getting hungry...

Homemade split-pea soup and a couple of slices of smoked provolone.

Left over BBQ'd chicken with a little rice and pea pods.

Salad with crunchy veggies, dried cherries and leftover grilled tri tip.

some of the best indian i've ever had--in madrid of all places! my sister and i had a late lunch at a little spot called taj mahal--we had a big brazilian craving, but it was closed so we ended up here instead. a blessing in disguise. we had extra picante fish curry, basmati rice with cloves, dried papaya and pineapple, cashews, pistachios, raisins, and banana chips, and the most amazing raita. oh and a glass of wine each, of course. when in spain.

@perky - Funny! I haven't had that stuff in years! That was my after-school snack as a teen. I would make the toast then switch the toaster oven to top brown and melt the cheese and turn the top to a nice leathery tan. Occasionally, it would get forgotten about and turn to a nice leathery black! I passed my special recipe along to my children, as well, and many a day I would come home from work to a smoke-filled kitchen and a counter strewn with charred crumbs.

I made myself a sandwich of roast beef, muenster cheese, roasted red peppers, tomatoes & garlic mayo on a crusty sub roll I got from Wegmans last night.....the only thing I forgot were some onions! ( I have some I just carmelized last Sunday night sitting lonely in my fridge at home.... :-(
I finished it off with an orange and a piece of chocolate.

Fage 2%, baked butternut squash and 2 Oreo's.

@frederika - can you believe I've never tasted wonder bread or individually wrapped cheese slices? they both seem like funny "foods" to me and in case nobody's noticed, i love to kid around. my mother made bread and always had great cheeses. grilled cheese was the first cooked food i learned to make, but they hadn't invented toaster ovens yet. i impressed a lot of dates with those buttery, crispy sandwiches and creamy tomato soup (out of a can, but i had to add the milk!). thanks again, mom!

.... that food of yours sounds seriously decadent!

Most of you are having such healthy sounding lunches--I'm really impressed with the amounts of fruit & veg.
I was gonna lie and say I had a salad! BUT, I had leftover AnthonyBourdain Mushroom Soup (it's all butter) and a grilled ham&swiss on sliced challah. No vegs. But now I feel guilty, so I'm going to have some strawberry ice cream and an oatmeal raisin cookie, just to get my fruit. LOL

Sadly, top ramen and water from the water fountain. I overslept and had no time to put together lunch, and have a meeting at noon. I am dipping into my EMERGENCY food drawer today!

Heating up some refrijitos for a bean and cheese burrito right now. And a diet crack...

Actually, it's brunch since it's only 11:15 and I forgot to eat before going to the market this morning (not a good plan, at all)...

Spicy homemade chicken chili...mmmm...perfect for a cold winter day!

Half a bahn mi sandwich and sliced pig ears in Sichuan pepper corn oil.

No, not at the same time, more like one after the other, and entirely not planned. I just scrounged around in the fridge for whatever looked good.

Mine was turkey and ricotta meatballs (Mario B, though he uses veal) and fetuccine with leeks and mushroom pangrattato (Jamie O). Still more leftovers from last night's dinner at home so this may be tomorrow's lunch as well, but I'm not complaining!

A late lunch of leftover homemade Madras Chicken (curry powder, mango chutney, garlic, appples, onions) cooked in crockpot and baked sweet potato. Tasty.

i met one of my friends at the metropolitan museum and she brought me a sandwich and an orange! totally unexpected, and really delicious! it was cream cheese, onion, avocado, radish, tomato and lettuce on whole wheat. it made me feel loved {and it also made me burp red onion continually when i went running later}.

Cheese and Tomato Omelet followed by fresh strawberries

Yesterday I had picked up my parents at the airport and we were starving, so we stopped at a Canadian Panera-clone and had soup and half-sandwich combos. For me - Italian Wedding soup and half a roast beef sandwich with lots of veg. I love cucumbers on a sandwich.

Today, anything could happen as my mom and I will be walking around Yorkville (schmancy part of Toronto).
