What's for dinner?

All I want to know is, what are you having for dinner tonight?

I guess I should answer my own question. I'm having meat loaf, mashed potatoes or scalloped potatoes ( I cannot decide) and brussel sprouts with pancetta.

leftover pork shoulder turned into pork tacos, tomatillo salsa, avocado, corn tortillas and a green salad.

Black bean and pork tenderloin "chili" with a crusty loaf of French bread.

leftover portugese stone soup.

Some shrimp bisque I picked up from Wegmans with a winter salad of greens & oranges. It's Ash Wednesday....so no meat for me.

dream: grilled lamb chops with herbed rice and grilled marinated vegetables.

reality: leftover spaghetti. again. can you tell i'm excited?

pork chops with pepperoncini , mushrooms, & balsamic vinegar.
have not decided what to have along with it. suggestions???

Off to the grocery store now. I'm making Orange-Honey Glazed Chicken Breasts and roasted carrots, thanks to Cooks Illustrated. And stuffed mushrooms thanks to Julia Child. Probably some salad with homemade parmesan vinagrette to start.

Ash Wednesday for me, too, so it is Sriracha glazed tofu with sauteed snow peas.

For tilapia fillets try this: Preheat oven to 450.

In a medium pan melt 2 TBsp butter. Stir in 1 TBsp Dijon mustard, 1 tsp Worcestershire sauce, and 1 1/2 TBsp lemon juice.

Salt and pepper your fish as desired, then place on a lightly greased baking sheet. Pour (or spread) the butter mixture over each fillet. Sprinkle with 3 TBsp dried bread crumbs. Bake 7-8 minutes til it's done. This is simple but truly elegant and tasty.

p.s. The first time I made the tilapia recipe above, I added (in error) the breadcrumbs right into the butter mixture, then spread that on the fish. It came out great anyway, and was just as good, so you can do this any old way you want.

Tonight is a Mediterranean night in our house - we have hummus, tahini sauce, whole wheat pita bread, grilled chicken kebabs, grilled onions, pickles and a platter of freshly cut vegetables seasoned with salt, pepper lemon juice and olive oil. We also have spinach&sausage soup in the fridge, but that will be for lunch:-).

Squash and spinach quesadillas with homemade guacamole.

last night was shrimp & grits and collard greens for mardi gras...tonight..ummmm.? Don't know yet...

The last of the peposo I made the night before last, stretched with spelt penne. Panforte for dessert :)

We're supposed to get another 7 to 10 inches of snow before I leave work (why am I still here?) – so I’m guessing dinner (which will be served after I shovel) will be a can of soup, bowl of cereal or maybe a frozen pizza.

I envy all of you.

evilchefmom - I made scalloped potatoes (from the Betty Crocker cookbook) last week for the first time in years and they were so good. Amazing that those few basic ingredients come together so deliciously.
As for me, I just picked up some smoked chorizo and am thinking about using it in some sort of improvized rice dish. It'll be like paella meets jambalaya, made with whatever's in the pantry & fridge.

Bacon, spinach, and mushroom quiche I made last night in anticipation of not having any time to cook tonight. Hopefully hubby won't eat all of it before I get home.

Not really sure. I have some leftover pasta with cheese, peas, shrimp and bacon, but not enough for a whole meal. Would be nice with that chicken breast I forgot to take out of the freezer.

Or maybe hot dogs with sauerkraut- a favorite quick meal.

Or maybe even some fried rice... I have some leftover steamed rice, a few shrimp, an egg, some onions and frozen peas. Although I did have an egg and rice for breakfast. Sigh. Decisions, decisions.

sloppy joes and french fries.

I have no idea. I think I may end up with penne with a simple sauce of garlic roasted grape tomatoes, fresh basil (my plant isn't dead yet!), and fresh mozzarella. Or butternut squash risotto.

Thank you to the creator of this thread because now I have two options for dinner and 10 minutes ago I had ZERO.

A big fat pork chop, bone-in; jalapeño peppers halved and stuffed with yogurt cheddar cheese; and buttered Brussels sprouts.

My boyfriend is on a mercifully brief crash diet (he doesn't need to be, but you know actors) so he's having two lamb rib chops (small), a hard-boiled egg, and a small tomato. Whee.


Leftovers! We have pot roast, pureed cauliflower, grilled pork tenderloin, roasted sweet potatoes, Rotel cabbage, plain macaroni, and tomato soup. A veritable cafeteria of choices - all homemade and delicious.

i'm addicted to my new omelette: gorgonzola and a little honey. i think i'll throw some mushrooms in there for good measure. not part of the question but strawberry ice cream for dessert

Jagerschnitzel for dinner. Oh, so good... and easy, too!

Everybody's sound so good. We are having Mac & Cheese. We have sleet and snow coming down today so the warm creamy dinner is just right.

lamb chops, polenta, steamed broccoli. I was thinking about tilapia for tomorrow night so I'm glad to have the above recipe. We get the fish from Costco and the Monterey Bay Aquarium says it's one the fish that's OK to eat in terms of sustainability.

Tonight is my busy night of the week, and I won't be home until after 10 p.m. So let's see, I have some carrot sticks in the fridge at work, a pudding cup, and there might be a hot dog from a street vendor if I'm too starving to make it home for a bowl of cold cereal.

potato leek soup, duck leg confit, home made miso noodles, maybe some kind of veggie, green salad.

Italian Ring Sausage from Mazzaro's in St. Petersburg; sauteed peppers and onions, and sweet potatoes - probably sliced and grilled with a baste of peanut oil and a drop of real maple syrup. (Since we have to shop for the sweet potatoes, will probably grab some creminis to add to the saute.) Tough day here, we had layoffs. Both BF and I need to cook tonight.

My husband promised to cook tonight. I think it is going to be one of his specialties - crack sauce pot pie - chicken pot pie made with not a creamy sauce, but Swiss Chalet sauce. For non-Canadians, Swiss Chalet is a chain of rotisserie chicken 'family restaurants'. The sauce is just a peppery brown sauce but I swear, it is like crack - even the Toronto people on Chowhound all admit to loving it, and often they will say they drink the remainder when they're done eating. I have not done that but I have been tempted.

You can make the sauce at home from a little packet and it is almost as good.

Lowbrow, yes, but yum. And I don't have to make it.

Actually, I am meeting up with a friend of mine to go to this little, very lovely, Tibetan restaurant, and I am already dreaming of their momos (steamd dumplings) made with locally-raised yak meat. Trust me, they are amazing!

It's a wet, yucky day here in the Midwest & only black bean soup & cornbread can make it better.

Whole wheat couscous cooked in tomato juice (yummy) with sauteed veggies including marinated chokes, red bell and carrots.

Spaghetti All' Amatriciana from the Silver Spoon cookbook....it's a fancy name for a very simple but delicious sauce with a total of 4 ingredients:
pancetta , onion, peeled & seeded tomatoes and one fresh chile. Cooking time 40 minutes.

It's difficult to believe that 4 ingredients make a fabulous sauce!

forget pancake tuesday... we made ash wednesday pancakes. haha.

my partner came home, looked at my forehead kinda funny, and asked "is it ash wednesday already?"

Leftover meatloaf; I put it in a whole wheat wrap with shredded cabbage, carrots and red onion and dressed it with a mixure of mayo & srihacha sauce!

JEP - where are you (yucky day comment)? I just finished shoveling for teh last 2 hours and another 2 inches fell while I was at it.

Great tilapia recipe moibec - it was delicious!

February in PA is usually freezing, icy, snowy. Today was mid-60's, drizzling. I opened all my windows to get some air. I haven't had to have my driveway plowed even once yet this season. Knocking on oak, pine, maple, mahogany, beech, teak and cherry! To all with snow or tornadoes, you have my deepest sympathy, truly.

It's Chinese New Year's Eve here in Singappore--25 people will be joining my family for a traditional meal. We will start with tossing a Yu Sheng Salad (for prosperity and luck) then sit down to a meal that will include roast suckling pig, chili prawns, pomelo salad, stir-fried broccoli,
pot-stickers, fried rice, rice noodle salad, sweet and sour chicken, imperial chicken with awesome dipping sauce, fruit and lots of special treats and cookies! You asked!

salad with sherry vinaigrette, artichoke frittata, lacinato kale.

Didn't finish........your meal sounds like a dream and I'm hungry all over again. Have you been cooking for a week? I could use a little luck and prosperity - what's in that salad?

It's the year of the Rat
The salad is pretty basic. Here's one recipe:

1/2 cantelope or 1/4 honeydew melon
1 pomelo
1/4 cup thinly sliced sweet pickled ginger
1 medium carrot shredded
1/4 lb jicama shredded

Dressing
3 to 4 tablespons oil
1 tsp sesame oil
3 tablespoon plum sauce


1 tablespoon sesame seeds
12 oz smoked salmon
1 tsp lime juice
1 tbsp cooking oil
1/2 tsp white pepper
1/4 cupp chopped roasted peanuts
1 green onion slivers

peel the melon and cut into crescents. Segment the pomelo cutting away the peel and white pith.

Arrange the melon, pomelo, carrot., ginger, jicama on a large platter

Combine dressing ingredients in small bowl

Toast the sesame seeds

Place smoked salmon over the salad on the platter, pour over lime juice, oil and white papper. Garnish with peanuts, sesame seeds and green onions

Using chopsticks everyone there should "toss" the salad while making wishes for the New Year.

(And no I didn't cook all week--it's a sort of potluck with each family bringing something. Most of which gets cooked right before eating!)

Spaghetti and homemade foccacia. What is Jagerschnitzel? Weinerschnitzel, I've heard of. Jagermeister as well. Is it a combination of the two?
