What do you do with marshmallows?

Gourmet marshamallows & homemade ones like a recent Matcha flavored one over on the Coconut & Lime blog are a melt-in-your-mouth treat for me. Locally, a chocolatier makes cinnamon & raspberry ones which I've added to hot chocolate. Of course, I like s'mores, Rice Krispie Treats & roasted over a campfire until gooey & crispy but not rocky road or Fluff. What are your uses for the marshmallow? Anyone attempted homemade ones---hints for success?

I love homemade marshmallows, I have made them several times with great success. The first time was to make Peeps for my niece's birthday party (at Easter time), they didn't quite look like the chicks they were supposed to but they were very cute and tasted great. Most recently I made them at Christmas to give as gifts with hot chocolate mix. The first time I used Martha Stewart's recipe, last time I used one I found online (maybe French Laundry or Maida Heatter?) but they were all pretty similar - gelatin corn syrup, sugar... They are not difficult to make but they are pretty messy.
I love them in hot choc, with s'mores but I have to admit I usually just eat them straight!

I make marshmallow all the time. I use Marthas recipe that is 4 pkgs gelatin, 2/3 cup corn syrup, 2/3 cup water, sugar, salt and maybe vanilla? In any case, I ditch the vanilla and add peppermint and pink food coloring for Christmas. Its so easy...dont be intimidated. If you dont have a stand mixer, dont bother. It really does take 10 minutes at high speed. Pam Cooking Spray is your FRIEND. Once the marshmallow sets, thats it. It is a permenant fixture. Also, when cutting, sharp kitchen scissors are the way to go. Use ALOT of powdered sugar to prevent sticking. Good luck!

Wow. Even as I kid, I never liked marshallows much. A while back, someone on TV was making them, and it looked good, but I never got around to trying them. Peppermint sounds good. Maybe I'll give it a shot one of these days.

I've found that when it comes to sweets, if I end up with extra, I can always send the surplus to work with hubby and the problem is solved.

I will eat good (=homemade or gourmet) marshmallows straight, but my most favourite way of eating 'mallows would be dipping them in melted chocolate! M-m-m!!!

P.S. Is now a good time to admit I never tried adding marshmallows to hot chocolate?:-)

Leave them in the pantry until they are stale, then throw them away. If they're on/in my food, pick 'em out.

But I do like roasting them over a campfire. I take great pleasure from the process, the challenge of getting them to exactly the perfect shade of toasty golden brown on the outside, and completely gooey, through and through, on the inside.

Then I feed them to my husband.

I don't much like marshmallows.

I remember Dominic revealed his taste for Fluffernutter sandwiches, any other SE's make these as a kid (or still)?

I've never had a fluffernutter sandwich, always thought it would be too thick and choke me to death.

Perfectly toasting a marshmallow is an art. I hate burnt 'mallows and I'm bugged by the pea-sized center that doesn't quite get oozey. I'm a tough girl so, I eat my mistakes and try again!

Marshmallows are the best part of a smores. I am trying to come up with a way to make a "smore" without the graham cracker; isolating the treat to my favorite parts, the toasted marshmallow and the melty, but not totally melted, chocolate.

I love pulling marshmallows between my thumbs and forefingers until it turns into a gooey, taffy mess. Yum.

I hate marshmallows burned over the campfire. My better half loves them cremated (as in lit on fire) but I like them just barely golden.

I love them in crispy cereal treats (especially made with cinnamon toast crunch or honey grahams).

Also, marshmallow sundae topping on cookies n' cream ice cream is pretty incredible.

Okay, I'm revising my response. I do really enjoy fresh pineapple dipped in marshmallow creme. But the pineapple can only be fresh (not canned or frozen or whatever), and it must be perfectly ripe. That's it.

Toast them over a cook out fire!

Yuck.
My kids use them in hot choc; besides that I have no use for them. It probably is a texture thing.

I eat them.

Oh, and there is an awesomely easy fruit dip that I used to make ( haven't in quite awhile, but thank you for refreshing my memory) - equal amounts of mini marshmallows and sour cream in a bowl. Cover and let it sit for a few hours or overnight and stir occasionally until the marshmallows break down and are not lumpy anymore. Dip fruit. Too good. There's another fruit dip that is really good - no marshmallows, but humor me here, I'm on a roll. Cup of sour cream, couple T brown sugar and Kahlua to taste. To die for. I guarantee you will be eating it from the bowl with a tablespoon.

I have always really wanted to make marshmallows and have encountered a few recipes that insist they are foolproof. I'm just afraid I will love them and eat them all myself because I have a savory-tooth SO who won't help with that unpleasant task.

I'm with LoCo. Fun to toast to perfection and feed to someone who loves them. I made Rice Krispie treats and tried one - it wasn't as bad as I imagined. I ate s'mores in GS and enjoyed them, but they were never something I craved. I love sweet potatoes, but if they are on top, I'll dig underneath or pass it up altogether. On hot chocolate, I'd much prefer a dollop of whipped cream. Are homemade less sweet?

In s'mores, and even then, only a bite or two. Just don't care for 'em.
