What do you do with a box of graham crackers?
Nabisco's Original Graham Crackers are my go-to brand. I do make the occasional graham crax crust but most often either dunk them in a mug of cold whole milk, spread with peanut butter or chocolate frosting. The grandkids love making s'mores which we discovered are fun even made in my fireplace. What your favorite way to use this classic cracker invented back in 1882?

I haven't bought them in ages, but I used to also like the cinnamon graham crackers alone or with fruit - bananas, apple or pear slices. Add a cup of coffee - breakfast! Also good with hard cheese or peanut butter. Crushed and mixed with butter for instant pie crusts - might have to try them again. We did smores over fires, grills, and fireplace. I'll have to remember next time my granddaughter comes to visit. No better treat! Might have to get some for snack time for me!

Aside from graham cracker crusts/pie shells and s'mores, I can't say I've ever had another use for them. Oh yeah, my niece liked to gnaw on them when she was little!
wookie at 7:56PM on 02/16/08
Cheesecake crust would be the only thing I've ever used them for (I make the mousse-y type no-bake cheesecake). Now that you made me think about it (and I do have a box in my cupboard), I feel that I should come up with something else!
brooke29 at 10:51PM on 02/16/08
I'm shocked nobody said Nutella. I haven't tried that, but I will when I get my box. Should taste good with the cinnamon crackers, don't you think?
PerkyMac at 11:13PM on 02/16/08
I like(d) to spread a thin layer of butter on stale graham crackers as a kid--something about the soft, creamy butter on the sweet crackers that stuck to the roof of your mouth tackily. Totally unhealthy but sometimes just the thing after a tough day. Also of course peanut butter.
Christina at 1:18AM on 02/17/08
I have used them but I don't like to. I ate too many as a kid. I like to ue ginger snaps, oreos, mcvities, vanilla wafers and butter cookies as crusts.
The only time I use the crumbs is key lime pie.
JerzeeTomato at 2:41AM on 02/17/08
i like to make smores with nutella and marshmallow fluff!!! oh and i like graham crackers spread with cream cheese or pb and apple etc etc, good crumbled up on yogurt instead of granola or pb and fluff. i like it to make graham cracker crusts for cheesecake, or with cheddar and grannysmith apples
sustarz at 4:43AM on 02/17/08
If I had a box, I would make key lime pie, which has to be one of the best pies ever (along with sweet potato, lemon meringue, coconut cream and apple-cranberry). I love pie.

Jaden over on Steamy Kitchen makes "Dark Chocolate Toffee Macadamia Bark". It's a super easy really good tasting toffee which uses GC as the base--check it out on her site!
Has anyone made those classic 7-layer bars with choc & butterscotch chips & Eagle Brand milk?
JEP at 7:49AM on 02/17/08
As a kid I used to break them up in a bowl and pour milk over them - like a bowl of cereal. I still crave it now every once in a blue moon.
jasonbrink at 8:14AM on 02/17/08
Spread them with raspberry jam!
mmclau28 at 11:06AM on 02/17/08
Dip in melted chocolate to make coated grahams for later, or i use them like churros and dip them in hot cocoa
tinat at 12:27PM on 02/17/08
I like to break them up and eat with milk, just a tiny little milk or they get too soggy. I also like them w/ nutella and of course for crusts.

@jasonbrink - We used to do that too! I don't know your age, but when I was a kid there was a graham cracker cereal called Clackers. They quickly became a staple in our house especially for after school snacks.
They are probably my favorite for baked cheesecake crusts. Love them with a thin spread of pb or almond butter. Haven't have Nutella in the house for awhile, but that sounds splendid. We always used to make sandwich cookies with leftover chocolate icing . My mom always made a special cake with crushed graham cracker crumb and nuts. It was my request for Bday cake every year. I haven't made it in years, but it is so incredibly good.
I always have a box of the originals around just for tea time. Great dippers. When I make chunky cinnamon applesauce au naturale, they are the scooping implement of choice.
frederika at 4:38PM on 02/17/08
When I was young I used to melt butter and brown sugar and a little cinnamon in a pan until bubbling then put g.c's in to warm them up. Take out and let the sugar cool and it is this yummy crunchy, soft kinda burnt sugary treat. I haven't had that in ages. Off to the kitchen for a treat for the kiddos.
carrielynnfields at 5:31PM on 02/17/08
Do you all know of the saltine toffee - sugar and butter melted then poured on top of saltines and baked then choc chips on top and spread when melted? I had a co-worker who made them with graham crackers and brown sugar because it was what she had in the house, they were better than the original. Not all that gourmet but they can hit the spot and are always a big hit at a pot luck.
mrsmoosie at 5:40PM on 02/17/08
mrsmoosie--that recipe sounds sorta like the one I mentioned Steamy Kitchen had made. I have a long history of regular toffee failures so making these would solve my problem:)
srhcb--I do think it would be kinda fun to make you own using your recipe, especially with the cinnamon sugar sprinkling. Very retro-like:)
frederika--had never thought of GC being a scooping element for applesauce & such...now I'm thinking chocolate, butterscotch or vanilla pudding..MMmm.
JEP at 7:06PM on 02/17/08
@JEP - Now that you mention it... Several years back when I put myself on a pretty strict diet, the dessert I allowed myself was Jello sugar-free instant pudding that I made with skim milk. I always had the low fat GC's or low fat vanilla wafers to either scoop the pudding or crush up in the bottom of the bowl. I never felt deprived of sweets because it's so delish. Thanks for reminding me!
frederika at 9:28PM on 02/17/08
Vanilla frosting and make a graham cracker sandwich - YUM
Hunnyoil at 12:42AM on 02/18/08
I put peanut butter and jelly on them. Also I have used pudding of any flavor, applesauce, and frosting. My kids and I also made mini gingerbread houses with them. During the holidays there was a gingerbread flavor, these were great.
P.S. if you are in a pinch and really want s'mores you can make them in the microwave. Just put the chocolate and marshmallow between the crackers and put in microwave for a few seconds. The marshmallow puffs up and melts. The marshmallow will get hard if not eaten quickly but if you really need a s'more ( or a school experiment in our case) it works great.

Anyone buy the chocolate covered graham crackers made by Keebler or Nabisco?
JEP at 9:23AM on 02/18/08
@Christina........you jogged my memory........we ate them with butter too. I can almost taste it. It might have been an after school snack or before bed? My parents put butter on crackers, all sandwiches, so naturally they'd put it on graham. I wonder if that has anything to do with my butter addiction today???? ;) At one point, Mom decided that margarine was healthier and I hated it. If that was on my sandwich I wouldn't eat it. It was always one or the other - she never just left it off. Odd, eh?
PerkyMac at 9:33AM on 02/18/08
Hi! LOVE graham crackers. I crush them and use them for pie or cheesecake crusts (and JEP - I love those bars - my mother always called them Hello Dollies. They're the easiest thing in the world to make and so good!).
I also like to spread a thin layer of PB on one and top it with a few thin slices of green apple for a snack.
srhcb - thanks for the recipe - I'll have to try that!

Homemade Graham Crackers Redux:
If you leave the Honey out of the recipe, (add just a bit more milk to help hold the dough together), and omit the Topping, these can serve as good teething biscuits, especially if stored in the freezer.
For toddlers, use cookie cutters to cut the crackers into animal shapes!

Those little chocolate covered fudge grahams from Keebler! I love those! Actually, I always remember those from when I was little and would visit my grandparents on the farm. They would always have those there for us little ones, and to this day, the taste just brings me right back to childhood.
Otherwise, besides the crust, I love them just plain, to be honest. S'mores, of course, are nice, oh and, yes I have made those seven-layer bars. I love those, too, and they make a great item to make for a potluck at work, too. I have never really seen people turn those down.
I actually just found another great recie online when I was trying to figure out what to do with an entire box of grahams that we slowly but surely going stale. I got it from the Keebler website for their grahams, and I think that it's called "Graham Chews" or something like that. They are nothing but trobule, calorie and fat-wise, but worth it in every way!

@JEP: I made those Eagle 7 layer bars in December, somewhat ironically, for a 50s Christmas party- but the real irony is that everyone, including me, loved them. Why? Turns out they are really good albeit super sweet.
The recipe was basically this but I think I added white chocolate chips too because I was trying to get rid of them, and I used butter instead of margarine.

RE: "basically this but"
I can't get the HTML "link" on SE to work either.
Anybody?

I tried to copy and paste the directions, but it didn't work, but this should - read the thread all the way through, because there was a mistake in the instructions, which was later corrected. Good luck!
