Vegetarian Challenge

Hi,

My husband and I are trying to be more green and reduce our impact on this little planet of ours. So, we have decided to eat vegetarian for one week out of each month. To make a bigger impact, I have started a vegetarian challenge on my blog. To check out the recipes, participate in the challenge and win a chocolate bar, visit my blog!

This is not a criticism. I'm just curious. Why go vegetarian only one week per month? Besides being only 25% of the time, it also creates a certain rigidity that is potentially discouraging.

For instance, my household is comprised of five die-hard omnivores, at least two of whom would pick meat every time if permitted to eat only one thing. Nevertheless, they happily devour everything I make on our two or three meatless days per week (not vegan). That means we're eating vegetarian about 35% of the time, on average. I've been doing this for years, but it has nothing to do with "going green" -- frugality, a love of vegetables, healthfulness, and meatless recipes that just taste wonderful are the only reasons.

Anyway. You might consider this approach, since it lends itself to making an even bigger impact (or would that be a lesser impact?), as well as adding a lot of flexibility.

One caveat: Sometimes an otherwise meat-free dish in our house does contain a little chicken stock. I feel this is justified because I usually make my own stock from the carcass of a chicken we've already consumed, which is frugal. And, since I'm not feeding any vegetarians, it doesn't undermine the vegetarian value of the dish, in my opinion. ;-)

I generally eat vegetarian 2 out of every 3 meals daily (breakfast and lunch are vegetarian; dinner includes meat or fish). As often as possible, generally 2 times/week, dinner is vegetarian as well. Often my vegetarian meals are vegan -- no animal products at all.

I agree with the opinions above... why make it only one week? If you enjoy certain meat-less recipes, why wait to enjoy them only 1 week out of the month? But, doing it your way is certainly a move forward... so I congratulate you.

If you are looking for certain degree of inspiration, look in my blog KarmaFreeCooking. Most receipes are lacto-vegetarian, some are vegan... but all of them are really delicious and tasty, IMHO.

Some great and easy options: Black beans mashed with sweet potatoes- YUM! Also, if you like faux meat products, try LightLife "Chkn"- tastes like the real thing but made od soy :)

Thanks for the feedback! I only picked one week, because my goal is to get people who are normally big eaters to give eating veggie a try. I figure that at this point they won't agree to do it forever, but maybe they could try it out for one week. My hope is that after a week of eating veggie, they'll ad a few regular vegetarian meals into their average week...
