If you had to pick one ethnic cuisine to eat, what would it be?

I know if I asked my husband, he would say Mexican. We've actually had this discussion. I love Mexican food, but I also love Italian. And Chinese. And Greek...Indian...German...

It would be a hard choice. But in the end, I'd probably go for the spicy. Mexican it is.
