pot stickers,help!
i'm making chinese pot stickers and want to know if i use wonton wraps if they will come out o.k. also I don't need to cook all 48 that the recipe calls for, how do i save them

Wonton wrappers are an acceptable substitute. Save the uncooked ones by freezing them on a cookie sheet and then plastic bagging them.

Adding to thebrokedown's suggestion - I'd freeze them in packages of six or a dozen. Even if you freeze them solid first, then dump into a ziplock bag, it's easier to portion control them if you know how many are in a small bag, vs. fishing out six or twelve.
And go ahead and use frozen wonton or gyozo skins!

The only caveat (and its kind of a personal opinion) is wonton wrappers with egg in them (they're exceptionally yellow, you'll be able to tell)...
That kind of dough doesn't really seem to match up with pot stickers, IMO.
However, you can still use that kind of wrapper with your dumpling filling, and instead of pan-frying them, just cook them through in water or chicken broth, they're tasty that way, too.

Hey there - I know you've prob have finished your dumplings as I'm late to respond!
won ton wrappers are typically thinner - but you can certainly use them - it just will be more difficult to fry without breaking them.
You can freeze the wrappers if you wrap them well. Just leave them stacked as they are, when they defrost they will come apart easily.

thank you all for your comments on my dumpling adventure.i used won ton wraps and they came out great! The reciepe yielded over 50. the ones I did'nt use i froze till firm and packaged them in freezer bags.thanks for all your help,pammy
