How do you make the best tasting carrot cake?
Today is National Carrot Cake Day--yay! There's probably a zillion carrot cake recipes...some are multi-layered, some are sheet-cakes & others are made into cupcakes. Lots of optional ingredients are added...raisins, various nuts, coconut or pineapple. Usually a hefty spread of cream cheese frosting...sometimes only on top of the layer, other times cream cheese frosting envelopes the entire cake and then it's finally sprinkled with chopped toasted walnuts. I prefer the recipes made with butter rather than oil---Martha Stewart has several good recipes over on her site. What are your best kept carrot cake secrets? Best bakery or restaurant rendition of the carrot cake?
