Ground lamb, growing lonely and cold in the freezer
I bought ground lamb for my one and only ground lamb recipe (sauteed with rice, cinnamon, pinenuts, all spice, garlic and onion). I bought too much. The remainder stares at me mournfully when I open the freezer, complaining of neglect. What do to with it?
(I have thought of moussaka and I'm not sold. But I can be persuaded).

Well, if you like indian/pakistani spicy food, try this recipe:
ground lamb with soft tortillas
saute some onion in olive oil, add chopped ginger and garlic. Add ground lamb and cook until slightly brown. In tomato sauce, mix cumin, coriander, tumeric powder, a little cayenne and salt and pepper. mix that in with ground lamb/beef. cook until it bubble and starts to thicken or oil seperates about 20 minutes or so. Sprinkle with chopped fresh ginger and cilantro and mint. serve with tortillas.

I'd make Shepherd's Pie - a great comfort food. Here is a recipe of Emeril's that is pretty easy. I'll assume you don't have veal stock reduction and recommend that you substitute chicken stock.

Keema mutter! Mmmmmm, ground lamb and peas. You can make it as mild or as spicy as you want. I usually take a recipe like this one:

My favorite recipe for ground lamb is Lamb & Eggplant Pastitsio from Epicurious.com (http://www.epicurious.com/recipes/food/views/105595). It is pasta (I use penne) with a lamb/eggplant/tomato sauce topped with pasta with a feta/garlic/bechamel sauce and baked. It takes awhile to put together, but really worth it.
Shepherd's pie is also delicious and a bit simpler to assemble (I don't use a recipe for shepherd's pie, I just wing it)

Lamb burgers. Hide a little bit of cheese -- feta, gorgonzola, goat -- inside. Put a slice of red onion on the grill too.

Don't let that lam!b languish in the cold place! This is our very very favorite. Call them lamb kofte burgers or as they are more commonly known at our house - "Lambie-Pies", for no other reason than we love them.
1# gr. lamb
1/2 c dry white wine
2 slices stale white bread
1 med onion, chopped
1 T chopped parsley
1T fresh thyme or 1/2 t dried
1 T lemon zest
1 egg, lightly beaten
1/2 t sweet paprika
s&p to taste
olive oil
Pour wine over bread, set aside. Combine other ingred. Squeeze wine from bread when softened, crumble bread and add to mixture. Combine gentl

as I was saying, combine gently but thoroughly. Oil hands and shape into 6 oval shaped patties and grill. (char-grill if at all possible - they are so much better that way) Try to get Father Sam's thick pita bread and split the pocket open. Lightly grill the pita just before the lambies are done. Or heat the pita in foil on the grill if you like it softer with no grill marks. Make a simple aioli with mayo and sliced scallions and slather it inside the warm pita. When the lambie pie has been stuffed in the pita, top with good feta, chopped onion and greens (either chopped romaine for crunch or arugula for the peppery spice). You could also top the patties with a tzatziki style sauce using a combo of plain yogurt, chopped cucumbers, garlic, lemon juice, a little dill (and a dash of sumac if you've got it), instead of the aioli.

Combine with ground beef or ground pork and make some seriously delicious meatballs with good breadcrumbs, milk, eggs, garlic, worcestershire sauce, salt & pepper. Brown them and then cover with your own sauce (can of fire roasted tomatoes, more garlic, a glug of red wine, fresh herbs, onions and carrots diced super tiny). Verrrry tasty and perfect for cold weather.

Wow, it appears I'm going to have to acquire more lamb! These all sound fantastic. I think I am either going to go with lamb burgers, or almondjoy's delicious sounding Indian/Pakistani recipe for this round. The burger with boursin sounds fantastic (what doesn't sound great with boursin?). Lambie-pies I'll save for the next time we get out the grill--come on spring!

I think you should try Dolma. My father-in-law is middle eastern and makes it for me when he comes over from the UK. I also stuff the lamb into onions and courgettes.

If you are looking for something relatively quick, make a meat sauce (not quite a "ragu" but somewhere in the same ballpark).
Saute onions and garlic in a little olive oil. Splash in some white wine, reduce. Dump in your ground lamb. S&P, fresh basil, oregano...simmer about 20-25 minutes or so and serve over pasta. Makes a nice weeknight dinner.
If the meat is inordinately fatty, brown it first, strain off the fat, then do the aromatics and wine, then re-introduce the lamb into the pan and proceed. Feel free to add a couple of Greek olives (pitted) to the sauce and top the dish with crumbled feta if you like.

I'd make Greek (or Greek-style, I don't know how authentic it is) meat pie.
Combine the ground lamb with ground beef, saute in a pan with onions, thyme, and a bit of cinnamon. Spread on sheets of phyllo dough. Top with crumbled feta and more sheets of phyllo dough. Bake until crispy and golden; cut into slices and serve with green salad.

Wolfgang Puck has a lentil soup recipe that's made with lamb meatballs. It has a lot of ingredients, but nothing exotic really. The first time I made it with ground turkey and it was good, but with ground lamb, it was over the top! I'm not sure if it's Moroccan, Indian, or possibly Turkish, but it's absolutely delicious!

Definitely shepherd's pie... with plenty of carrots and onions sauteed with the meat... but with mashed winter squash on top instead of potatoes. I'll be right over!

combine with ground beef and make thick patties. Wrap with a slice of bacon and cover top with barbecue sauce and put under broiler.
