Egg free sugar cookie

Can anyone suggest an egg free roll out cookie recipe for me to make for my friend? Dairy is fine, but I'd hate the cookies to be dry and nasty. I guess if there is enough butter they will just be like shortbread.

I have an egg free gingerbread cookie recipe.

Just do some googling. A surprising number of cookies don't use any eggs. Also, you can do some experimenting yourself. You just have to figure out what the eggs are doing in the batter. If they're just making it stick, you can find a whole lot of substitutes.

shortbread is good alternative for an egg-free cookie, BUT the dough doesn't roll out very well as it tends to spread alot in the oven. and forget trying to cut out shapes with cookie cutters! i tend to press my shortbread into a shallow pan (i often use a fluted tart pan) and then use the cookie cutters after the baked cookie has cooled a bit.

Cook's Illustrated had a great butter cookie recipe that used cream cheese in place of the egg. Search the site for glazed butter cookies. I think the recipe is under Christmas cookies in their baking book.

That does sound like an excellent idea, i think the cream cheese would give it that nice texture and be a bit easier to do cutouts.

How about taking your favorite sugar cookie recipe and replace the egg with Egg Replacer from EnerG ... you can find this at any health food store. I use it in my cookie recipes and it works great.

I have a recipe for shortbread like cookies that are egg free and quite tasty. They don't spread out as much as traditional shortbread. I often make them into star shapes with a cookie cutter, and they are really quick and easy to make. I also add lemon zest and lemon juice to give them a bit of a zing, or roll them in powdered sugar or regular sugar.


1 cup butter
1/2 cup powdered sugar
2 1/4 cups All-Purpose Flour
1/4 cup salt
(1 teaspoon citrus juice-lime, lemon, or orange optional, as well as 2 teaspoons zest.)

1. Heat oven to 400* (375 for dark sheet)
2. Beat butter, powdered sugar together on medium until smooth. (at this point is where I add in lemon/lime/orange juice)
3. When butter and sugar are smooth, add in the flour and salt. (Zest, too if you are going that way.)
4. Roll out and use cookie cutters to press out shapes, or shape into balls or crecents.
5. Bake 6-10 minutes until edges brown.
6. Roll in powdered sugar or regular sugar while warm, or ice when cool.
