Cooking with kamut flour?
I had pancakes made with kamut flour and they were really good. Does anyone know anything about cooking with kamut flour or have any recipes? Thanks!

Pizza Dough
2 cup organic kamut flour
or organic unbleached white flour
1 Tablespoon dry yeast
or 1 package dry yeast
2/3 cup warm water, 85°
1 1/4 Tablespoon Extra Virgin Olive Oil
1/2 teaspoon Sea Salt

Kamut is related to wheat, so you can substitute it for some or all of the wheat flour in a recipe, depending on the result you're looking for. It has less gluten that regular wheat flour, so if the recipe relies on gluten, you need to take that into account.
I bake a lot of bread, and I've found that I can substitute up to 1/3 of the wheat flour in my standard recipe with just about any other flour, and the result is fine. When it gets to the halfway point, results can be a little dicier, depending on what the substituted product is.

A neighbor of mine gave me some kamut flour to try. I just printed a white kamut bread recipe from Bob's Red Mill website. Looking forward to trying it!
