Clay Chicken
I recently found a long lost shallow clay pan with a weighted clay top. I know it's for making chicken but I really don't know how to use it properly. Does anyone know how to use this thing to best advantage?

Check out Alton Brown's website. I've seen him use them for several applications, but darned if I can remember what at the moment. I'll check back if memory ever returns.......maybe this will jar someone else's memory?

Check out this site, by Romertopf, a manufacturer of clay pots. All sort of information there, including care, cleaning, history and of course, recipes.

I'm pretty sure the chicken is split and flattened, weighed down by the cover, but that's about it. Couldn't find it on Romertopf.
