Hmmm, since that day falls on a Friday and that is date night for us, it probably will end up being pizza pie. Can we cheat and extend it to pie weekend? Do you think the Pie Day people would allow a tart or crostata? I'm kind of with LibraryLady - warm apple pie sounds yummy. But I'm really missing pumpkin pie also. Or custard. And blueberry....

I'm craving cream pies - banana and coconut, topped with fresh whipped cream. Easy, too!.

Rhubarb pie....JUST rhubarb..none of those add in's like strawberry or anything. My grandmother used to make it and it was heaven! I'm going to have to dig out the recipe.

Yay -- an excuse to bake a pie!!

I bought some extra cranberries around Thanksgiving and froze them, so I'm starting to feel a cranberry-pear pie, with a crumble topping made from crushed gingersnaps.

I'm still in a comfort food mode, so I'm thinking, spinach and potato pie... but by the 14th of March it can change 20 times:-)

Is this for real? Does Hallmark make a card for pie day?
I've never heard of this day...perhaps because I don't bake.
Does one have to bake a pie on this day or can we just eat?

Library Lady - that is some pi plate. How on earth did you find it? Your first link worked perfectly. If I was still married to my engineer ex (30 years and out), I'd make him a Valentine's Day dessert and serve it in the dish. He'd love it!

Oh my. I had no idea there was such a thing as pie day. I love pie. Since I hate making crust, I'm thinking more long cream pie lines. Yes, chocolate cream pie with Paul Newman Chocolate Wafer cookie crust and maybe some slivered almonds and freshly whipped cream with just a touch of sugar and little curly bittersweet shavings.

Which I now want RIGHT NOW! so this pie may be coming a little early for the big day. On the other hand, who would possibly get tired of chocolate cream pie? I can always make it again.

I bought that pi dish as a Christmas gift for my son the math major! I doubt he's made a pie, but he did like the dish.

Speaking of comfort food, I have really been on one lately, so I am breaking the norm and making a layered pancake pie. That's right, a nice toast crust (I know, a little wierd, but trust me, this is good), layered with thin pancakes (almost crepes, really) and a jam between each layer (maple syrup tastes good, but gets a little messy). Yummy!

I might have to make Derby pie... mmmmmmm.

the pioneer woman posted an amazing looking chocolate pie a few days ago. that would be one to try.

Well, since one of my food resolutions this year is to make homemade pie crusts and perfect (or as close as I can!) it...seems like a great way to start! I think a classic apple for sure and perhaps a blueberry. Yum.

I'm planning on making a key lime pie with a gingersnap crust - I'll add a couple of drops of green food coloring in honor of the Irish. I *love* key lime pies because they're so easy and such a crowd-pleaser.

@jcrisco - Gram used to make rhubarb cream pie and rhubarb is not that far away. Thanks for reminding me; I'll have to look that one up.

@jcrisco - I love rhubarb in many incarnations, but have only had it mixed with berries in pie. I'm really curious about your recipe - is it a sweet pie?

As some of you know, I'm on a pie-crust mastery mission (BTW, the french rolling pin is now MINE, all MINE)... I guess I've got exactly one month to get it down pat for pie day!

I'll post back in a few days to let you know how it goes. Starting with either a pecan or an old fashioned apple... or both... simply because the ingredients are on hand... maybe followed by a pumpkin... do you think I can get my family totally burned out on pie in 28 days?

@Perky --- my Grandmother was the pie queen! It is a sweet, yet tart pie. It ends up having a crystalized layer of sugar on top of the crust, which was our favorite part mixed with the tart rhubarb suspended above it.

She also was quite famous for her tart cherry pies from our cherry tree, coconut cream, chocolate cream, lemon cream (noticing a cream trend here), and pecan pies! I'm drooling now.

My mother once made my father a coconut cream pie using her recipe and he said "it's good, but not as good as your mom's". She never made it for him again. Ha!

@LoCo........how lucky can your family be? No way burned out - more likely you're creating an indelible memory and word of your feat will be passed on to generations!

You will let us know your choices, and the perfect crust recipe for each type of pie? I can hardly wait!

@jcrisco.........it all makes my mouth water. i love all pies, but cream pies are my favorite, although i never tasted a lemon cream pie.

I can't believe I missed this!
arghhhh... oh well there's a fairly good chance I had some pie on this date anyways as I just about eat it everyday!

I go through stages... but my current favorite is Mrs Sullivans pies.
As far as a commercial, mass produced pie goes - they are the best.
