Weird wings!
I have been posed a challenge for a sensory evaluation contest to come up with the most unusual or weird chicken wing recipe or presentation EVER that can be verified by a restaurant menu or cookbook. Since I don't like to lose, I need help!

I do not know if this is weird to anyone else...when I was young, my mother asked me to put the chicken in the oven before she came home from work. She forgot I did not have any culinary training before requesting this most important task. I decided to spice the chicken up a little and added some cinnamon to the chicken. It would not have been so odd if I added tin foil to the top of the dish to keep the chicken moist but I omitted this important step. My sister, mother and I forced the chicken down our throats that night... I still am self conscious of my meals! (It wears on you every time you attempt to make something and the family guffaws about that one time you made cinnamon chicken and it was horrible). I heard there are recipes with cinnamon and chicken...and upon looking it up - ha! I have a childish desire some 20 + years later to say, "na na na na na naaaa!"

The only other presentation for chicken wings (not venturing into molecular gastro style thinking, cause there'd be no end down that road) that I've encountered is lollipop form. They look like little rack of lamb chops. Here's a pic:

Obviously these could be seasoned in any manner. I'm in Texas, and a popular but less conventional flavor is a Dr. Pepper glaze. If you need verification, they sell them at a bar called Pluckers:

Yes, I agree it is an odd contest, renzata. An R&D chef affiliated with my company (which shall remain nameless) does sensory tastings with dozens of the most unusual ingredients. If you think you're a foodie, you should encounter one of these folks! I just want him to meet his match. It's fun, though and thanks for your help. Hmm, molecular gastronomy may be the ticket. Maybe a hot buffalo foam or celery stick ice cream...I'll have to check Ferran or Heston's books.

One of my favorite odd chicken wings are boneless stuffed.You actually have to de-bone the middle wing, and stuff it with a mixture of shrimp, celery, gr. onion, and more. Bake them and drizzle with hoisin sauce.
Definitely unique. If you want the recipe I'll have to dig it up, but I doubt many have tried them!

Yay pegasus! That sounds like the weirdest yet - I would love that recipe if you can get it for me. When you say the "middle" wing, do you mean the drummette? We will definitely try them. Also thanks to everyone who has answered so far.

How delish! I'm now picturing a tangy, spicy, boneless wing stuffed with some creamy blue cheese/cream cheese/green onion (I hate celery) mixture.
I'm going to have to try this!
I also like the "lollipop" wings - I don't like bones in my food and find they are easier for me to eat.

if you are looking for odd, i would do a frenched chicken wing, which is just a clean bone from the wing to the breast side, and all the meat is pushed down not just cut off. then prepare it in an unusual method of a slow oil pouch, duck fat is best here but a nice clean oil will do just as well, and then really any kind of sauce that you find wierd i think would suit this fine.

This is the recipe for boneless wings.
Very labor intensive, but sooo good.
!/4 C. chop gr. onions
1/4 C.finely chop celery hearts
1/8 C sugar
1/2 C chop raw shrimp
1/2 C fin chop wh. onion1/4 c fin chop cilantro
2 oz. shiitake orwooden black mushroom chop
1# gr. pork
12-18 lg chicken wings
Preheat oven to 325 In a mixing bowl combine all ingredients (except wings). Cut drummettes off, take and debone middle wing. (cleaver off the joint, push meat toward wing, twist the two bones off.) Stuff wing with mixture, place on cookie sheet 20 min. remove and coolSeason 1 C. flour with cajun seasoning, (or Emeril'sBam). dredge wings in flour, dp. fry 3-4 minuntil golden brown and crispy. drizzle with hoisin sauce. serve hot.

Thanks, Pegasus - they sound suitably freakin' freaky! It sounds like a large quantity of stuffing for 12-18 wings. Do you just really pack it in there and use it all or could there be stuffing left over? I'm not sure if I'm getting the whole process right in my head, but when I'm actually looking at a chicken wing pehaps it all will become crystal clear.

One more question, Pegasus - is there a resource for the stuffed boneless wing recipe? Like is it from a menu or in a cookbook?
