Vegetarian Crock Pot recipes
I've just bought a 4 quart slow cooler on sale, as I've heard positive things about slow cookers and I once had a friend who raved about them. Now I'm looking for recipes. I searched the Serious Eats site and found a Moroccan Jewish dish in comments (November 2007) and I will definitely try it some time, being Jewish. I know that baked beans are an option.
Other ideas?
Can I cook soup in it? I'd use it for the tortilla soup that I'm making for Friday evening (see my previous post) .

Chili
Bean soups
Vegetable soups or stews
Ratatouille or other stewed vegs
Curried dishes
Winter squash
Those are just a few that come to mind. You must have some vegetarian cookbooks, right? Look in them for anything that is ordinarily braised, slow roasted (with a cover), or long-simmered on the stovetop.

I cook nearly all my soups in a slow cooker. Things that cook in a relatively short time on top of the stove are often improved by cooking in the slow cooker; the longer, slower cooker times helps the flavors to meld. I definitely second Fresh from the Vegetarian Slow Cooker. In addition to great recipes for soups, stews, chilis, and casseroles, it also includes appetizers and desserts.

The book Ms Nan mentioned has received many strong reviews, but for clarification, it is not published by Gourmet (ie., magazine).

I made an excellent lentil stew/soup this fall - broth, veggies, cumin, s&p, whatever type of lentils you desire. Slow cooked lentils provide great fiber and are an excellent soup thickener.
