Super Bowl Snacks
With Super Bowl Sunday fast approaching need some advise on what to bring to the party. I'm looking for vegetarian, finger food that is good at room temp and travels easily. And of course is football appropriate. Ideas?

This might sound a little odd, but believe me it's fabulous! My vegan friend that I met ages ago taught it to me and I love it. Basically, it's just a dip. You just combine one part peanut butter to two parts salsa and about a teaspoon of curry powder (more or less to taste). Then, just adjust from there. So, if it's still too peanut buttery, just add more salsa. Goes great with everything from pretzels to crisps and even toasted pita bread (my favorite).

You can also do a layered Mexican dip (which I do with meat). Make layers of black beans, cheese, salsa, sour cream and chopped black olives (the tasteless ones). Bake in the oven at about 350 till hot and bubbly. Serve with sturdy tortilla chips or taco sized fresh flour torts which can be filled with a spoon. Once the dip is baked, it's perfectly fine at room temp but if you could bring a hot tray with you, it's even better hot.

Trader Joe's sells great Thai Vegetable dumplings...you could pan fry them and serve with some dipping sauce.

Empanadas, particularly very small ones; you can put whatever savoury or sweet thing you like inside, and I've carried several in my pocket/rucksack on occasion, and they're very sturdy, so transport easily.
They take a bit of time to make, but any one step is brief, and if you get someone to help in filling and closing them, that phase goes by in no time.

You can also serve Falafel Balls, make some accompanying dip like Tzatziki to go with it.
Toast some Pita Bread with some Sea Salt and Pepper in the oven until they are crispy and lightly browned and serve it with some Hummus. Top the Hummus with some chopped Sun Dried Tomatoes in Olive Oil.
You could also do up a batch of Sweet Potato Fries, peel them up and slice them up in fry shapes, toss them in a large mixing bowl and drizzle a little Olive Oil, salt, pepper and a pinch of cumin. Toss them in the oven (this can be done at your friends house too as the raw oiled potatoes will keep well) and serve it with a dipping sauce made of peach or apricot preserves (about 1 cup) mixed with a touch of maple syrup, some stone ground mustard to taste, a pinch of thyme and a touch of white pepper. You'll want to cook the fries UNCROWDED on the pan at 425 for about 30 minutes until they get crispy.
You could cook the fries the day ahead and take them over cold and warm them up for 10-15 minutes at 350.
