Robert Burns

Robert Burns' birthday was January 25th. My family has hosted one for the past couple of years. It's always a great time. Our haggis is basically a lamb meatloaf (ground lamb & a little beef liver, oatmeal, onion & black pepper) cooked in parchment paper. My mom uses the parchment paper because a sheep's stomach isn't that easy to locate in SE Pennsylvania (Ok, maybe it can be found, but our guests probably aren't ready for that level of authenticity). We also serve tatties & neaps (mashed potatoes and turnips), courgettes (this dish usually varies slightly, last night we served them roasted with lemon juice, olive oil & garlic), and cockaleekie soup (chicken stock with sliced leeks).

After dinner, we do have a poetry reading, but it's not mandatory. Some people read Burns' material, others bring their own. Dessert follows and it always includes a trifle.

Did anyone else host a supper?

I'm only 25% Scot, so I don't do much, but my BIL Jim always celebrates in the traditional fashion.

He not only serves haggis, he owns a kilt, and wears it! He also consumes his fair share of whisky.

I'll have to ask him what he does with leftover haggis.

Deep/batter-fried? I'm not kidding actually, I've come across this... at Gatwick Airport, I believe.

Burns Supper with a Twist

I really wanted to do a Burns supper, but I was away for the weekend so I couldn't - but I am definitely cooking one up next weekend. My boyfriend and I spent a week in Scotland a few months ago and I loved the Macsweens veggie haggis, so I'm really eager to try out my recipe that will hopefully recreate it.
