Iron Chef and You

So, I was bored the other night and ended up watching Iron Chef America (far inferior to the Japanese original) and only stuck to watching it, because it was Moritmoto. So, I started to wonder - if you could be in the competition, and you cuold pick the chef to go against, who would it be and why? And if there is one secret ingredient that you would either love, or utterly dread to work with, what would that be?

For me, I would love to be against either Morimoto (honestly, the best chef that this version has) or Chen from the Japanese version. I would be scared to death to get something like see urchin or eel. I love making desserts, and I doubt that I would be able to do that with those ingredients!
