Jerusalem Mix?

I recently returned from Israel and wanted to replicate something called "Jerusalem Mix." It was basically a pita or a baguette filled with griddle cooked gizzards, livers, hearts, etc. Does anyone ever make this dish? It was so good and I want to try it at home.
